A unique batter of sama, rajgira, arrowroot, sour curds, coriander and ginger green chilli paste is used to make this delicious and satiating sama panki.
Without onion, garlic or any overwhelming spices, this sanwa panki is very soothing to the palate.

With only 48 calories per sama panki, this is a perfect recipe to be had by all, restricted amounts for diabetics.

For sama panki- To make sama panki, blend the sanwa millet in a mixer to a fine powder and keep aside.
- Transfer it to a bowl, add the rajgira and arrowroot flours, curds, rock salt, coriander, ginger-green chilli paste, cumin seeds, ghee and 1 ½ cups of water in a bowl and mix well to make a batter of pouring consistency. Cover and keep aside to ferment for 1 hour.
- Grease one side of each banana leaf with a little oil and keep aside.
- Pour 1 1/2 tbsp of the batter on one half of the greased side of a banana leaf and spread it evenly to make a thin layer.
- Cover with the other greased banana leaf with the greased side facing downwards.
- Heat a non-stick pan or a tava (griddle) and cook it on a medium flame till light brown spots appear on both the sides of the leaves and the panki peels off the leaf easily.
- Repeat with the remaining ingredients to make 34 more pankis.
- Serve the sama panki immediately.

In a mixer put 2 cups sanwa millet (sama).

Blend to a smooth powder. You will have to pulse 4 to 5 times.

Transfer ground sama to a big bowl.

Add 1/2 cup rajgira (amaranth) flour.

Add 4 tbsp arrowroot (paniphal) flour.

Add 3/4 cup sour curds (khatta dahi) , beaten.

Add rock salt (sendha namak) to taste. We added 1 tsp. Rock salt is used during fasting in India.

Add 1 tbsp finely chopped coriander (dhania).

Add 1 1/2 tsp ginger-green chilli paste.

Add 1 tsp cumin seeds (jeera).

Add 2 tbsp ghee.

Add 1 ½ cups of water.

Mix well to make a batter of pouring consistency.

Cover and keep aside to ferment for 1 hour.

You need to buy dark green banana leaves. This makes it easy to remove the panki and it does not stick. First of all when I go to market they are two types of banana tree leaves, so when we buy we have to ask for banana leaves for preparing Panki. Don't buy the pointed banana leaves which are used for pooja.

Cut the banana leaves with a sicossor into small sizes of 4.5 inches width and approx 7 inches in length. We will be cooking the panki on the banana leaves. We cut 2 meadium banana leaves into 16 pieces. This will make 8 makai pankis.

Spread the batter with the back of a spoon on the banana leaf.

Cover with the other greased banana leaf with the greased side facing downwards.

Heat a non-stick tava (griddle).

Place on a hot tava.

Cook the panki on both sides till light brown spots appear on the banana leaves and the panki in-between peels off the banana leaves easily. Repeat to make 14 more pankis.

Peel the top of the banana leaf. Your sama panki | farali sama panki | rajgira, arrowroot, sama panki with curds | is ready.

Serve sama panki | farali sama panki | rajgira, arrowroot, sama panki with curds | immediately with healthy green chutney.

Spread the batter with the back of a spoon on the banana leaf.

Press the panki using flat spoon, laddle while cooking so that it gets evenly cooked.

After cooking sama panki | Gujarati farali panki | discard banana leaves.
