Our very own version of the "Baked Stuffed Potato", fondly named by street vendors as a "Bomb". Whole potatoes scooped and stuffed with a chatpata paneer filling and topped with spicy green chutney and crispy sev.

Ingredients
2 large potatoes , boiled and peeled
butter for cooking

For The Paneer Filling
1/2 cup grated paneer (cottage cheese)
1/2 tsp cumin seeds (jeera)
1/4 tsp asafoetida (hing)
1 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
2 tbsp finely chopped mint leaves (phudina)
1/2 tsp black salt (sanchal)
1/2 tbsp oil
salt to taste

    For the paneer filling
  1. Heat the oil in a broad non-stick pan and add the cumin seeds and asafoetida.
  2. When the cumin seeds crackle, add the green chillies, paneer, black salt and salt, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  3. Add the coriander and mint and mix well.
  4. Divide the filling into 4 equal portions and keep aside.

  1. Cool the potatoes completely and cut each potato horizontally into 2 halves.
  2. Scoop the center of each potato half a little, using a spoon so that a light depression is formed for the filling.
  3. Fill 1 portion of the filling into each potato case and press them well so the filling does not spill out.
  4. Heat a non-stick tava (griddle), place the stuffed potato cases on it with the stuffed side facing upwards and cook on a medium flame for 1 minute, using a little butter.
  5. Turn them upside down and cook on a medium flame for 1 minute.
  6. Top with the sev and green chutney and serve immediately.

The paneer stuffing was just wow! I used only 1 tbsp of mint as it has a strong flavour, and added chopped onions to the garnish. Amazing response with kids and easy to cook for beginners too.
