For aloo bomb chaat- To make aloo bomb chaat recipe, cut the boiled potato in half and scoop the center of each potato half, using a spoon so that a light depression is formed for the filling.
- Sprinkle a little salt, pepper powder, chaat masala and plain flour. Gently coat the potatoes.
- Heat oil in a deep pan, and fry a few coated potatoes at a time. Deep fry them on a medium flame till light golden brown in colour.
- Drain them on an absorbent paper. Keep aside.
For assembling- Place the fried aloo in a serving plate, fill the stuffing in the cavity of each aloo, put ½ tsp green chutney, ¼ tsp chilli garlic chutney, ½ tbsp sweet chutney over each aloo.
- Sprinkle some nylon sev, masala chana dal, roasted peanuts, pomegranate, lemon juice and little chaat masala.
- Repeat steps 1 and 2 to make the remaining aloo bomb chaat.
- Serve aloo bomb chaat immediately.
