Stuffed Baked Potatoes | Indian style microwave Stuffed Baked Potatoes |
Stuffed Baked Potatoes are a delicious and indulgent Indian-style snack made in the microwave, combining soft, fluffy potatoes with a flavorful vegetable filling and a creamy, cheesy sauce. This recipe transforms the humble potato into a gourmet delight that’s both comforting and satisfying. The microwave method makes it quick and convenient, allowing you to enjoy perfectly baked and stuffed potatoes without the need for an oven. Whether served as an appetizer, snack, or even a light meal, these Stuffed Baked Potatoes are sure to be a hit with both kids and adults alike.
To begin, prepare the potatoes by washing and pricking four large ones with a fork. Microwave them with a small bowl of water for 8 to 9 minutes until they are tender. Once cooled, cut each potato in half vertically and scoop out the centersto create a cavity for stuffing, keeping the scooped-out potato aside. Sprinkle a bit of salt and pepper on the hollowed halves to enhance their flavor. This step forms the base of your dish — the crispy shell that will hold the delicious filling and sauce.
For the vegetable filling, combine green peas, sweet corn kernels, and chopped French beans in a microwave-safe bowl with a little water and microwave for about 5 minutes until tender. Then, heat 2 tsp of oil in another bowl, add finely chopped garlic, and microwave briefly until aromatic. Mix in the cooked vegetables, the reserved scooped-out potatoes, chilli powder, and salt, and microwave again for a minute. The result is a spicy, colorful, and slightly crunchy vegetable filling that gives the dish a perfect Indian touch with a hint of garlic and spice.
Next, prepare the sauce by mixing white sauce, grated cheese, red chilli flakes (paprika), dried oregano, and salt. This creamy and cheesy mixture adds richness to the stuffed potatoes, balancing the spice of the filling. Once ready, stuff each potato half generously with the vegetable mixture and arrange them in a microwave-safe dish. Pour the sauce evenly over the top so that it covers the filling and seeps into the potato shells, ensuring every bite is flavorful and indulgent.
Microwave the Stuffed Baked Potatoes on high for about 2 minutes until the sauce is warm and slightly bubbly. Garnish with finely chopped spring onion greens for a touch of color and freshness. The combination of creamy sauce, spicy vegetables, and soft potato creates an irresistible medley of textures and tastes. Serve immediately while hot, as the cheese and sauce are at their most luscious when fresh out of the microwave.
In summary, Indian-Style Microwave Stuffed Baked Potatoes are a quick, delicious, and visually appealing dish that can be served as a snack, starter, or even a light dinner. The fusion of spicy Indian vegetables with creamy cheese sauce creates a perfect balance of flavors that’s both comforting and exciting. This recipe is a great way to elevate simple ingredients like potatoes and vegetables into something truly special. Plus, since it’s made entirely in the microwave, it’s easy, mess-free, and ideal for busy days when you want something warm, wholesome, and satisfying in just minutes.
