The Pav Bhaji Fondue smartly combines veggies, cheese, cream, milk and pav bhaji masala, into a richly flavored dip. It is really quick and easy to make. Not even an amateur cook can go wrong with this recipe!!
We have made Pav Bhaji Fondue with very few ingredients, that are easily available and if you’d have well managed pantry, you’ll find it all at home.
We have started with heating butter, added garlic paste which would perk up the flavor of Pav Bhaji Fondue, you can also use chilli garlic paste instead of garlic paste. Further, we have added veggies like onion, capsicum and tomato which offer a perfect blend of crunch, tang and flavor. Further, the main ingredient that is pav bhaji masala is added and chilli powder. Also, cheese and milk are added that give it a creamy texture. Once it is cooked, it is coarsely blended in a food processor or a blender so that it gives a unique mouthfeel. Then, Pav Bhaji Fondue is again poured to the pan, cream is added and cooked for a minute and Pav Bhaji Fondue ready to be served!! We have eliminated potatoes but it has all the other key elements which makes it luscious and tasty!!
Place on the fondue stand with tea light or burner ignited. Serve the Pav Bhaji Fondue immediately with herb bread. Instead of herb bread, you can even make croutons out of ladi pav and then serve them with the pav bhaji fondue. If not serving immediately, the Pav Bhaji Fondue might thicken so, add little milk, re-heat and adjust the consistency before serving. But it is recommended to serve immediately fresh and hot, so that the aroma and flavour are at their best when served.

For pav bhaji fondue- To make pav bhaji fondue, heat the butter in a deep non-stick pan, add the garlic paste and sauté on a medium flame for 30 seconds.
- Add the onions and capsicum and sauté on a medium flame for 2 minutes.
- Add the tomatoes and 1 tbsp of water, mix well and cook on a medium flame for 2 minutes, mashing with help of a masher, while stirring occasionally.
- Add the pav bhaji masala, chilli powder, cheese, milk and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Allow the mixture to cool slightly and blend in a mixer to a coarse mixture.
- Transfer the mixture back into the pan, add the fresh cream, mix well and cook on a medium flame for 1 more minute.
- Serve the pav bhaji fondue immediately with herb bread.

For making the Pav Bhaji Fondue, heat the butter in a deep non-stick pan. To prevent butter from burning, you can add a little oil.

Add the garlic paste. You can even use chilli garlic paste.

Sauté on a medium flame for 30 seconds.

Add the onions.

Add the capsicum.

Sauté on a medium flame for 2 minutes or until onions are translucent.

Add the tomatoes. You can also add boiled mixed vegetables like cauliflower, peas and potatoes.

Also, add 1 tbsp of water.

Mix well and cook on a medium flame for 2 minutes or until tomatoes are soft .

Mash with help of a masher and also, stir occasionally.

Add the pav bhaji masala. We have made use of fresh pav bhaji masala made using this recipe of homemade pav bhaji masala.

Add the chilli powder.

Add the cheese. Processed cheese can be substituted with cheddar cheese or mozarella.

Add the milk and salt. Ensure the milk is at room temperature, to prevent it’s chances of splitting while cooking. Also, we have added cheese so, add the salt accordingly.

Mix the Pav Bhaji Fondue well and cook on a medium flame for 1 minute, while stirring occasionally.

Allow the mixture to cool slightly. Blend in a mixer to a coarse mixture to get a unique mouthfeel. Depending on your liking, you can even blend it to a smooth paste.

Transfer the mixture back into the pan.

Add the fresh cream.

Mix Pav Bhaji Fondue well and cook on a medium flame for 1 more minute.

Switch off the flame and place on the fondue stand with tea light or burner ignited. Serve the Pav Bhaji Fondue immediately with herb bread. Instead of herb bread, you can even make croutons out of ladi pav and then serve them with the pav bhaji fondue.

If not serving immediately, the Pav Bhaji Fondue might thicken so, add little milk, re-heat and adjust the consistency before serving.
