10 whole dry kashmiri red chillies
10 to 12 garlic (lehsun) cloves
salt to taste

  1. To make chilli garlic chutney, soak the kashmiri red chillies in hot water in a deep bowl for ½ an hour.
  2. Drain, remove the stems.
  3. Combine the kashmiri chillies, garlic, salt and ¼ cup of water in the mixer and blend till smooth.
  4. Store the chilli garlic chutney in an air-tight container and refrigerate. Use as required.

How to make Chilli Garlic Chutney:

  1. For making the Chilli Garlic Chutney, take 10 Kashmiri dry red chillies in a small bowl. Kashmiri chillies are ideal for this red chutney recipe because they provide a fiery red colour & are not very spicy. If you are using any other variant of dry chillies then depending upon their heat, you can increase or decrease the quanity.Remove the stems from the soaked red chillies and discard them. If you wish to make chilli garlic chutney less spicy, then remove the seeds too.
  2. Add hot water that is enough to soak them.
  3. Cover them with a lid and keep aside for 30 minutes.
  4. After half an hour, you can see the chillies have softened a bit.
  5. Drain them with the help of a strainer. Keep aside.
  6. Crush the garlic cloves lightly using a pestle. Peeling becomes easy when you crush them.
  7. Peel the garlic cloves with your fingers.
  8. Chop them up roughly so that it is easier to blend them to a fine paste.
  9. In a small mixer jar, add the red chillies. The small chutney jar is more suitable for making Chilli Garlic Chutney as it helps in blending till smooth in spite of being less in quantity.
  10. Add the roughly chopped garlic.
  11. Add salt as per taste to the Chilli Garlic Chutney.
  12. Using around ¼ cup of water, grind to a smooth consistency chutney. For better taste and texture, use mortar and pestle to make this Chilli Garlic Chutney (Red Garlic Chutney)
  13. Transfer the Chilli Garlic Chutney to serving bowl. Use the chutney to make delicious chaat recipes like bhel puri, sev puri, ragda patties or popular Mumbai road-side food recipes like pav bhaji, tawa pulao etc. 
  14. You can also transfer and store the Chilli Garlic Chutney (Red Garlic Chutney) in an air tight container and refrigerate it. Use as required.

The chilli garlic chutney is amazing. It gives an amazing color when I add it to any of my vegetables due to the addition of kashmiri chillies. i have made it and stored in my freezer and i use it whenever my recipe requires good red color. I used it for pavbhaji and the colour and flavour was amazing.
