Ingredients

2 tsp oil
1 1/2 tsp cumin seeds (jeera)
2 slit green chillies
3 cups whey
salt and to taste
2 tbsp finely chopped coriander (dhania)
1/2 cup paneer (cottage cheese) cubes

  1. To make whey soup, heat the oil in a deep non-stick pan and add the cumin seeds.
  2. When the seeds crackle, add the green chillies, whey, salt and pepper, mix well and bring to boil.
  3. Add the paneer and coriander, mix well and simmer for 30 seconds.
  4. Serve the whey soup hot.

How to make the Whey Soup

  1. To make the whey soup | calcium, protein rich whey soup | low carb whey soup | healthy whey soup with paneer , heat the oil in a deep non-stick pan. Using whey in soups is an innovative idea to incorporate this protein rich liquid in your diet. This is the leftover liquid that remains during cheese making, especially cottage cheese, and it will be an absolute waste to throw it out.
  2. Once the oil is hot, add the cumin seeds.
  3. When the seeds crackle, add the green chillies. We have used slit green chillies but you can even finely chop them. You can also add curry leaves if you want.
  4. Now add the whey. Whey is filled with milk protein and is very helpful for people trying to gain muscle mass.
  5. Now add the salt to taste.
  6. Also add the pepper to the Whey soup. It gives a strong, peppery flavor to the soup.
  7. Mix well and bring the whey soup to a boil.
  8. Finally add the paneer to this. This makes the Whey soup even healthier to consume.

How to Make Whey

  1. To make whey at home recipe, rinse a deep non-stick pan with ¼ cup of water and quickly simmer it for 2-3 minutes. This will prevent milk from scorching as the water forms a protective layer between the pan and milk. This is generally done in stainless steel pans but, if you have an old non-stick pan it is advisable to make this extra effort so that the milk does not burn.
  2. Rotate the pan in a clockwise motion, so the water spreads evenly in the pan. Discard the water and pour 2 liters of full fat-milk. 
  3. Bring it to a boil on medium high flame. This would take around 8 to10 minutes.
  4. Stir it occasionally to avoid milk from sticking to the bottom of the pan or browning. It is always better to use a wooden flat spoon because
    • It doesn’t get heated up easily.
    • If u place it horizontally over the vessel in such a way that it touches 2 opposite edges, it will prevent the milk from falling off the edges of the pan after the milk is boiled.
    • While the milk is boiling, we will assemble the strainer. Take a bowl and place a strainer on top of it.

  6. Arrange a muslin cloth or clean cheesecloth, thin napkin over it. Keep aside.
  7. When it starts boiling, switch off the flame and wait for 1 minute. The milk should be boiling hot before you add the acidic substance to speed up the process of curdling.
  8. Add the lemon juice gradually, while stirring gently and wait for 2 minutes. Always add the acid (lemon juice or vinegar) only after the milk has boiled completely.
  9. Stir the milk and check if the milk has curdled completely.
  10. If the milk has not begun to curdle, add more lemon juice. 
  11. Let it stand for a few seconds. Once the milk has curdled completely, it will look like this. The greenish watery whey has separated.
  12. Strain using a clean muslin cloth. 
  13. Fold all the 4 sides of the muslin cloth and twirl it gently so that all the whey that is in the milk solids gets evenly drained out. Whey is ready to be used for Whey Soup.

Whey made by curdling milk.. Whey made by hanging curds.. Are both the same whey?

Tarla Dalal    No, both are different. But curdling milk, you get whey. This is the water separated by boiling and curdling. By hanging curds, you get plain water in the curd.
