Main Recipe
- 8 medium sized tomato
- Mexican Fried Rice
- 1/4 cup grated mozzarella cheese for the garnish
To be mixed into the stuffing
- 1/2 cup shredded cabbage
- 1/2 cup boiled green peas
- 1/2 cup leftover cooked spaghetti
- 1/2 tsp grated ginger (adrak)
- 1/2 tsp chopped green chillies
- 1 cup chopped coriander (dhania)
- 1 cup chopped mint leaves (phudina)
- 1/2 tsp freshly ground black pepper (kalimirch)
- salt to taste
- 2 tbsp oil
Method
- Cut the tomatoes and scoop out all the pulp and seeds and discard them. Keep the tomato cups aside.
- Heat the oil in a pan, add all the ingredients for the stuffing and sauté for about 2 minutes.
- Add the thick white sauce and milk and mix well.
- Fill the above mixture into the tomato cups.
- Bake the stuffed tomatoes in a pre-heat oven at 200oC (400oF) for 15 minutes.
- Top with the cheese and bake again for 5 minutes.
- Serve hot.
