આ પ્યાઝ કી કચોરી મૂળ તો જોધપુરમાંથી ઉત્પન થયેલી ગણી શકાય, પરંતુ આજકાલ તે પૂરા રાજસ્થાનમાં પ્રખ્યાત થઇ ગઇ છે. બહુ ઓછા લોકો આ તળેલી કાંદાના પૂરણવાળી કચોરી ઘરે બનાવે છે. રાજસ્થાનની નમકીનની કોઇપણ દુકાનમાં આ ગરમા-ગરમ કાંદાની કચોરી અથવા કાંદા-બટાટાની કચોરી તૈયાર મળતી જ હોય છે.
