how to make the batter

  2. Add 1 cup jaggery powder.
  3. Mix well and keep aside to cool slightly.
  4. In another bowl, add 1 cup whole wheat flour (gehun ka atta). Wheat flour absorbs liquid, helping to thicken the batter to the desired consistency for easy spreading and cooking. Wheat flour contributes a subtle nutty flavor to the dosa, complementing the sweetness of the jaggery.
  5. Add ¼ cup rice flour (chawal ka atta). By combining rice flour with wheat flour, makes the batter more pliable and easier to spread evenly on the tawa (griddle). This is important for achieving a thin, lacy dosa.
  6. Add 1 tsp cardamom (elaichi) powder.
  7. Add 2 tbsp grated coconut
  8. Add the jaggery water.
  9. Whisk well to form a lump free batter.
  10. The batter should be of pouring consistency.

This dosa is so delicious. More than what i expected. The jaggery is just perfect in the quantity. it is not too sweet also. The dosa are so soft that they just melt in the mouth. The best part is it does not require fermenting nor it uses plain flour. The combination of rice flour and whole wheat flour is a hit for sure.
