The most popular Indian drink, chaas recipe or plain chaas recipe which is called plain buttermilk outside India. plain chaas is made from dahi (curd), water and salt. We have added a bit of jeera nad spices to give it an Indian flavour.

Serve chilled chaas on hot summer afternoons and watch your family’s energy levels rise instantly. It is good to note that plain chaas also aids in digestion. However, remember this is more of a day-drink. Chaas is basically a yogurt based drink which cools your system from the inside. Basically plain chaas is very famous in Gujarat and Rajasthan.

Tradionally, chaas is made by churning or mixing yogurt and water with madhani also known as whipper. Chaas is super easy and quick to make. All you need to do is take curd in a bowl and whisk it. This helps in getting a uniform mixture on blending.

We have used homemade curd for the chaas recipe. Add cumin seed powder which uplifts the taste of buttermilk. Add ginger-green chilli paste, black salt and mix everything well. Add cool water and whisk well. Further, we have tempered chaas, you can skip it if you don’t like chaas with tempering. Take oil in a small pan, add cumin seeds, once they crackle add asafoetida and pour over the chaas. Mix well and our buttermilk is ready to be served! You can also garnish it with coriander if you wish to.

As a Gujarati, we prepare and consume chaas with each and every meal. My meal is incomplete without consumption of buttermilk!

Ingredients

For The Chaas
2 cups fresh curd (dahi) , whisked
1 tsp cumin seeds (jeera) powder
1/2 tsp ginger-green chilli paste
1/2 tsp black salt (sanchal)
salt to taste
1 tsp oil
1/4 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)

For The Chaas Garnish
2 tbsp finely chopped coriander (dhania)

  1. To make the chaas, combine the curds, cumin seeds powder, ginger-green chilli paste, black salt and salt in a deep bowl and mix well.
  2. Add 4 cups of chilled water and whisk well. Keep aside.
  3. For the tempering, heat the oil in a small pan and add the cumin seeds.
  4. When the seeds crackle, add the asafoetida and pour the tempering over the buttermilk.
  5. Serve the chaas chilled garnished with coriander.

  1. Chaas makes a delicious accompaniment for handvo.

How to make tadkewali chaas at home

  1. To make chaas recipe | plain Indian buttermilk recipe | plain chaas recipe | in a deep bowl, take 2 cups of fresh curds and whisk it. This helps in getting a uniform mixture on blending. We have used homemade curd for the chaas recipe. Many people face problems like milk does not set or the curd turns sour and sticky, so you can refer our recipe video on how to make curd at home to get thick and creamy fresh homemade curd.
  2. Add the cumin seeds powder. Lightly roasting the cumin seeds before making the powder uplifts the taste.
  3. Add the ginger-green chilli paste. You can make spicy buttermilk by adding a few more ingredients.
  4. Add the black salt and salt in the deep bowl. You can skip the sanchal if you don’t have it.
  5. Mix everything very well.
  6. Add 4 cups of chilled water and whisk well. Keep aside. If not chilled water then use ice cubes to make chilled buttermilk. Chaas is a popular summer cooler in India. 
  7. For the tempering of chaas, heat the oil in a small pan. Giving a tadka to the chaas is an age-old practice. If you don’t like it then skip doing it. 
  8. Once the oil is hot, add the cumin seeds.
  9. When the seeds crackle, add the asafetida. Ginger, curry leaves, fennel are some other popular ingredients added to the tadka to enhance the taste of the chaas.

  11. Mix well.
  12. Serve plain chaas chilled.  Garnish with coriander.

Tips for chaas

  1. We recommend the use of full fat curd for best texture and flavour. Learn how to make curd at home.
  2. Health conscious can replace full fat curd with low fat curd.
  3. Coriander, for the garnish, can be replaced with chopped mint leaves. 
  4. Black salt can be replaced with chaas masala which is readily available in the market.
