Ingredients

For Papad Mangodi ki Sabzi
6 medium sized raw urad dal papads , broken into small pieces
1 cup coarselycrushed readymade moong dal mangodi
1 cup curd (dahi)
2 tsp chilli powder
2 tsp coriander (dhania) powder
1 tsp dried mango powder (amchur)
1/4 tsp turmeric powder (haldi)
2 tbsp oil
1 tsp cumin seeds (jeera)
1/2 tsp mustard seeds ( rai / sarson)
a pinch of asafoetida (hing)
salt to taste
Method

For papad mangodi ki sabzi

    For papad mangodi ki sabzi
  1. To make papad mangodi ki sabzi, combine the curds, chilli powder, coriander powder, dried mango powder, turmeric powder and 1 cup of water in a deep bowl and mix well using a whisk. Keep aside.
  2. Heat 1 tbsp of oil in a pressure cooker, add the coarsely crushed mangodis and sauté on a medium flame for 2 to 3 minutes.
  3. Add 1 cup of water, mix well and pressure cook for 2 whistles.
  4. Allow the steam to escape before opening the lid. Keep aside.
  5. Heat the remaining 1 tbsp of oil in a deep non-stick pan, add the cumin seeds, mustard seeds and asafoetida and sauté on a medium flame for a few seconds.
  6. Remove from the flame, add the curds mixture, cooked mangodi and salt and mix well.
  7. Switch on the flame and cook on a medium flame for 2 minutes, while stirring occasionally.
  8. Add the papad, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  9. Serve papad mangodi ki sabzi immediately.

  7. Mix well using a whisk ensuring to break all the lumps.
  8. Keep aside curd mixture.

  3. Sauté on a medium flame for 2 to 3 minutes.
  4. Add 1 cup of water.
  5. Mix well.
  6. Pressure cook for 2 whistles.
  7. Allow the steam to escape before opening the lid. Keep aside.

  3. Add 1/2 tsp mustard seeds ( rai / sarson).

  7. Add cooked mangodi.
  8. Add salt to taste. We added 1/2 tsp salt.
  9. Mix well.
  10. Switch on the flame and cook on a medium flame for 2 minutes, while stirring occasionally.
  11. Add 6 medium sized raw urad dal papads , broken into small pieces.
  12. Mix well.
  13. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  14. Serve immediately.
