1 1/2 cups whole wheat flour (gehun ka atta)
1/4 tsp turmeric powder (haldi)
1/4 tsp red chilli powder
1 tsp black sesame seeds (kala til)
salt to taste
1 tsp oil
2 tbsp finely chopped coriander (dhania)
whole wheat flour (gehun ka atta) for rolling
3 tsp butter for cooking

To Be Mixed Together Into Paneer and Onion Stuffing
1 1/2 cups thickly grated paneer (cottage cheese)
1/2 cup finely chopped onions
1 tsp finely chopped green chillies
1/4 tsp turmeric powder (haldi)
1/4 tsp garam masala
1 tsp chaat masala
2 tbsp finely chopped coriander (dhania)
salt to taste

  3. Mix well and knead into a soft dough using ¾ cup water.
  4. Divide the dough and the stuffing into 6 equal portions and keep aside.
  5. Roll a portion of the dough into a 100 mm. (4”) diameter circle using a little wheat flour for rolling.
  6. Place a portion of the stuffing in the centre, fold the edges towards the centre and press well so that the stuffing doesn’t spill out.
  7. Roll it again into 150 mm. (6”) diameter circle using a little wheat flour for rolling.
  8. Heat a non-stick tava (griddle) and cook the paratha, using ½ tsp of butter, till golden brown spots appear on both the sides.
  9. Repeat steps 5 to 8 to make 5 more paneer onion parathas.
  10. Serve paneer onion stuffed paratha hot.
