Masala Omelette Pav is one of the classic street foods of Mumbai, which packs the sumptuousness of omelettes into a handy sandwich form. egg omelette pav is also a popular Indian street food. It is super easy and quick to make.
Omelette is an egg preparation which has a lot many variations and here we have got you the Indian version of it which is famously known as “Masala omelette”. Masala omelette is also famously sold on streets and every vendor has his own style and version of making it.
To make Mumbai roadside omelette pav perfectly cooked omelettes are sandwiched between buttered and toasted ladi pav. A sprinkling of onions perks up the texture of the Masala Omelette Pav while a dash of garam masala boosts the flavour. You can also sprinkle some cheese and chaat masala if you wish to.
We have made Mumbai roadside omelette pav by whipping eggs along with onions, tomatoes, green chilli coriander leaves and garam masala. Further, we have poured a portion of the egg mixture on a non-stick pan and cooked it from both the sides until brown. Next, to assemble we have toasted ladi pavs with butter and kept aside. Next, we have sprinkled garam masala on both the sides of the ladi pav along with onions and cut and placed masala omelette over the lower halve of the ladi pav and closed the pav by pressing it lightly. Serve it along with a hot cup of Masala Chai, it goes along really very well. You can also, pack it in your tiffin and carry it along and relished while travelling.

For the masala omelette- Crack the eggs in a deep bowl and beat well using a fork.
- Add all the remaining ingredients and mix well.
- Heat a non-stick tava( griddle) , grease it with ¼ tsp oil, pour a ladleful of the mixture on it and tilt the tava slightly and cook on a medium flame for 2 minutes using ½ tsp of oil evenly over it.
- Turnover and cook on a medium flame for 2 more minutes.
- Repeat steps 3 and 4 to make 3 more omelettes. Keep aside.
How to proceed to make masala omelette pav- Slit the ladi pavs and apply 1 tsp of butter on both the sides.
- Heat a non-stick tava ( griddle) and cook a ladi pav on both the sides till it turns golden brown in colour from both the sides.
- Place a ladi pav on a clean, dry surface, sprinkle little garam masala on both the sides of the ladi pav and sprinkle 1 tbsp of onions on the lower side of the ladi pav.
- Cut an omelette into 4 equal portions.
- Place the 4 pieces of the omelette over the lower halve of the ladi pav above the onions.
- Close the pav and press it lightly.
- Repeat steps 2 to 6 to make 3 more masala omelette pavs.
- Serve the masala omelette pav immediately.

To make masala omelette pav | Mumbai roadside omelette pav | egg omelette pav | masala omelette sliders | hold an egg in your hand, tap it against the kitchen counter or the rim of your bowl. Using your thumb separate the eggshell where it’s cracked and break open in a deep bowl. Preferably make use of free-range eggs. They are rich in omega 3, protein & vitamins.

Similarly, break 3 more eggs in that bowl and check for shells. If there are any tiny bits of eggshell then to fix the issue, wet your finger. Place your finger into the egg bowl and gently pick up the shell.

Beat well using a fork.

Add all the remaining ingredients starting with onions.

Add finely chopped tomatoes. Feel free to add other ingredients like ginger, garlic, spring onions, mint, capsicum, bell peppers, mushroom etc.

Add green chillies.

Add finely chopped coriander.

Add salt. Many people even add milk to give omelette a fluffy, rich texture and make it light.

Whisk well using a fork.

To cook Indian masala omelette, heat a non-stick tava( griddle), grease it with ¼ tsp oil. Do not overheat the pan or else the omelette will turn brown immediately without the eggs getting cooked. Instead of oil, you can make use of butter or ghee.

Pour a ladleful of the mixture on it and tilt the tava slightly to distribute it evenly across the pan.

Cook on a medium flame for 2 minutes till the omelette sets and turns light brown and the edges turn crisp

Add ½ tsp of oil evenly over it.

When the base firms up, turn over the omelette carefully and cook masala omelette on a medium flame for 2 more minutes. Cover it with a lid if you wish to cook the masala omelette faster.

Remove the Indian masala omelette in a plate. You can sprinkle some cheese, black pepper powder or red chilli powder to perk up the masala omelette.

Repeat steps 12 to 17 and make 3 more egg masala omelette. Keep aside.

To prepare Mumbai roadside masala omelette pav, slit the ladi pavs using a bread knife or a sharp thin blade knife.

Apply 1 tsp of butter on both sides. Ensure the butter is at room temperature so, it spreads easily.

Heat a non-stick tava ( griddle) and place the ladi pav inverted on the tawa and cook till golden brown.

Flip the ladi pav and cook on the outside till it turns golden brown in colour from both the sides.

Remove the ladi pav and place on a clean, dry surface.

Sprinkle little garam masala on both the sides of the ladi pav. You can even apply green chutney, tamarind chutney or ketchup if you like.

Sprinkle 1 tbsp of onions on the lower side of the ladi pav.
