For kaddu ka bharta
 

  1. To make the kaddu ka bharta recipe, heat the oil in a pressure cooker and add the cumin seeds. When the seeds crackle fennel seeds, nigella seeds and fenugreek seeds.
  2. Add the onions and sauté till they turn translucent.
  3. Add the pumpkin, asafoetida, turmeric powder, chilli powder and salt with ½ cup of water, mix well and pressure cook for 2 to 3 whistles so that the pumpkin becomes mushy.
  4. Add the amchur and mix well. Simmer till the oil separates from the pumpkin.
  5. Serve kaddu ka bharta hot, garnished with the coriander.
