For egg kothu paratha- To make egg kothu paratha, cut the bajra rotis into thin long strips and keep aside.
- Heat oil in a deep pan, add cumin seeds, mustard seeds, garlic, ginger, green chillies and curry leaves. Sauté for a few seconds.
- Add onions and sauté on a medium flame for 2 minutes. Add tomatoes and again sauté them for 2 to 3 minutes.
- Add 2 egg whites, mix well and cook on medium flame for 4 to 5 minutes, while stirring occasionally.
- Add carrot, coloured capsicum and shredded cabbage, sauté on medium flame for a minute.
- Add turmeric, chilli powder, garam masala, salt and pepper. Mix well and sauté for a minute.
- Add the bajra roti and 1/4 cup of water. Mix well and cook on medium flame for 2 to 3 minutes.
- Add lemon juice and garnish with coriander and mix well. Serve egg kothu paratha.
