To make egg bhurji paratha, first make the bhurji. Beat the eggs in a deep bowl and whisk it using a fork. Keep aside. Heat the oil in a broad non-stick pan, add the green chillies and sauté on a medium flame for a few seconds. Add the onions and sauté on a medium flame for 2 minutes. Add the capsicum and sauté on a medium flame for 1 minute. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Add the chilli powder, beaten egg mixture and salt, mix well and cook on a medium flame for 2 minutes, while stirring continuously. Add the coriander, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside to cool completely.

Then to make anda bhurji paratha, combine all the ingredients and knead into a soft, smooth dough using enough water. Keep aside for 30 minutes. Divide the dough and bhurji into 5 equal portions. Roll out one portion of the dough into a circle of 75 mm. (3") diameter using whole wheat flour for rolling. Place one portion of the bhurji in the centre of the circle. Bring together all the sides in the centre and seal tightly. Roll out again into a circle of 150 mm. (6") in diameter, using whole wheat flour for rolling. Cook on a hot tava (griddle), using a 1 tsp of ghee, till both sides are golden brown in colour. Repeat with the remaining dough and bhurji to make 4 more parathas. Serve hot with green chutney and tomato ketchup.

salt to taste
2 tbsp finely chopped coriander (dhania)

For The Paratha
1 cup whole wheat flour (gehun ka atta)
1 tsp oil
salt to taste

  2. Add 1 tsp oil.
  3. Add salt to taste. We added 1/4 tsp salt.
  4. Add enough water gradually to make a soft dough. We first added 1/4 cup water. Then we added 2 1/2 tablspoons more of water.
  5. Knead into a soft dough.
  6. Cover and keep aside for 30 minutes.

  3. Keep aside.

  1. Heat 1 tablespoon oil in a broad non-stick pan.
  2. Add 1 tsp finely chopped green chillies.
  3. Sauté on a medium flame for a few seconds.
  4. Add 1/4 cup chopped onions.
  5. Sauté on a medium flame for 2 minutes.
  6. Add 1/4 cup chopped coloured capsicum.
  7. Sauté on a medium flame for 1 minute.
  8. Add 1/4 cup chopped tomatoes.
  9. Mix well.
  10. Cook on a medium flame for 2 minutes, while stirring occasionally.
  11. Add 1/4 tsp chilli powder.
  12. Add a pinch of hadi.
  13. Add a pinch of garam masala. (optional )
  14. Add beaten egg mixture.
  15. Add salt to taste. We added 1/4th tsp salt.
  16. Mix well.
  17. Cook on a medium flame for 1 minute, while stirring continuously.
  18. Add 2 tbsp finely chopped coriander (dhania).
  19. Mix well.
  20. Cook on a medium flame for 1 minute, while stirring occasionally.
  21. Keep aside to cool completely.

  2. Dust a rolling board and flatten the dough with your hands.
  3. Roll out one portion of the dough into a circle of 75 mm. (3") diameter using whole wheat flour for rolling.
  4. Place one portion of the bhurji in the centre of the circle.
  5. Bring together all the sides in the centre and seal tightly.
  6. Roll out again into a circle of 150 mm. (6") in diameter, using whole wheat flour for rolling.
  7. Heat a non-stick tava (griddle) and grease with oil.
  8. Place the uncooked roti on it. 
  9. Cook the bottom of the roti for 30 upto seconds on medium heat till blisters appear on the paratha. 
  10. Then grease the top of the paratha with little ghee. 
  11. Flip over.
  12. Cook the bottom part of the paratha for 15 seconds and grease the top of the paratha.
  13. Remember to press the paratha down with a spatula while cooking. Press gently all over to ensure uniform cooking.
  14. Keep flipping the paratha for a few seconds till it turns golden brown. Your roti is ready. 
  15. Cook the remaining paratha and place in a plate. 
  16. Serve hot.

If you really want to post a recipe using eggs pl don''t use Tarla ji''s name. She was a strict vegetarian and I''ve been using her recipes eversince I started cooking. Mainly because it has only vegetarian recipes. Thanks

Tarla Dalal    Yes, 99% of our recipes are eggless. We have few egg recipes. We do understand your feelings and that’s why we don’t promote egg recipes. I am Tarla Dalal’s son and there was egg used in the house. Her early cake recipes also had eggs.

Unfortunately, I was not able to roll out the parathas as the bhurji was little wet and was sticking out to the roller. Made only 2 very small parathas and the rest we had as Egg Bhurji and Chapati.

Tarla Dalal    Hi, This is a tried and tested recipe.The bhurji should be dry, no water should be there after your bhurji is cooked. Also make sure, it cools down completely, if your bhurji is slightly warm also might effect the rolling of paratha. Do try and give us your feedback.
