This very popular dish is prepared by cooking a full cauliflower in some salt water, topping it with a scrumptious mughlai gravy and baking it to perfection. Though a little time consuming, shahi gobhi is a great option for serving at parties as it looks great and tastes even better!

Ingredients

For The Gravy
3 tbsp ghee
1/4 cup finely chopped onions
1 bayleaf (tejpatta)
1/2 tsp sugar
salt to taste

To Be Ground Into A Paste (for The Gravy)
1/4 cup roughly chopped onions
1/2 cup roughly chopped tomatoes
4 whole dry kashmiri red chillies , broken into pieces
25 mm (1") stick of cinnamon (dalchini)
3 cloves (laung / lavang)
12 ginger (adrak) , roughly chopped
4 cloves garlic (lehsun)

Other Ingredients
1 medium sized whole cauliflower , stalks and leaves removed
3/4 cup boiled green peas
2 tbsp grated processed cheese
2 tbsp fresh cream for the garnish
Method

  1. Heat the ghee in a kadhai over a slow flame, add the onions and bayleaf and cook for 1 minute.
  2. Add the prepared paste and cook for 3 to 4 minutes.
  3. Add the sugar, salt and 1 cup of water and simmer for a few minutes. Keep aside.

How to proceed

  1. Boil a vesselful of water with a little salt, add the cauliflower and cook till it is tender. Allow it to cool.
  2. Cut out and remove the remaining hard stem in the centre of the cauliflower with a sharp knife.
  3. Place the cauliflower in a serving dish, pour the gravy over it and sprinkle the peas and cheese on top.
  4. Bake in a pre-heated oven at 200ºc (400ºf) for 10 to 15 minutes until the cauliflower is golden brown.
  5. Serve hot garnished with cream.
