For the noodles and vegetables- Heat the oil in a broad non-stick pan, add the noodles, bean sprouts, beans and broccoli and sauté on a medium flame for 2 minutes, while stirring occasionally.
- Add the soya sauce and salt, mix well and cook on a medium flame for 1 minute. Keep aside.
For the curry sauce- Combine all the ingredients in a broad non-stick pan, mix well and cook on a medium flame for 4 minutes, while stirring occasionally. Keep aside.
How to proceed- Just before serving re-heat the curry sauce.

Take enough water in a deep nonstick pan, add approx. 100gms of the rice noodles. Let it boil on a medium flame for 4 mins.

Drain the rice noodles and keep aside.

Take the broccoli florets in a microwave safe bowl.

Microwave on high for 6 minutes.

Drain using a strainer. Keep aside.

Once the oil is moderately hot, add the rice noodles.

Sauté on a medium flame for 2 minutes, while stirring occasionally.

Add the soya sauce and salt. Do not overcook or over mix or else the vegetables will lose their crunch.
