For the makhani sauce- Heat oil in a deep pan add the onions and sauté on a medium flame for 2 minutes.
- Add the tomatoes, garlic and cashews, mix well and cook on a medium flame for 2 minutes.
- Add ¼ cup water, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.
- Cool and blend till smooth. Keep aside.
- Heat butter in a deep pan , add the prepared tomato- onion mixture, chilli powder, kashmiri red chilli powder, coriander powder, sugar and salt, mix well mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the dry fenugreek leaves and mix well. Keep aside.
For the paneer marination- Combine 1½ tbsp oil, kashmiri red chilli powder, chilli powder, turmeric powder, coriander, besan, salt and pepper and mix well.
- Add the paneer cubes and toss gently. Keep aside.
How to proceed- To make paneer makhani pizza, place a pizza base on a clean, dry surface, put ¼ cup makhani sauce on each pizza base and spread it evenly.
- Sprinkle ½ cup of cheese evenly on it.
- Arrange ¼ cup sliced onions, ¼ cup thinly sliced coloured capsicum evenly over it.
- Arrange paneer cubes and finally sprinkle chopped green chillies and bake in a pre-heated oven at 200°c (400°f for 12 minutes or till the pizza turns crisp and the cheese melts.
- Repeat steps 1 to 4 to make 3 more pizzas.
- Serve the paneer makhani pizza immediately garnished with oregano and chilli flakes.
