Pro tips of fansi dhokli. 1. Add besan (bengal gram flour). Besan acts as a natural binder, holding the wheat flour dough together and preventing it from becoming crumbly or falling apart during cooking. This is especially important for dhokli, which needs to maintain its shape during simmering or boiling in the curry. 2. Add whole wheat flour (gehun ka atta) to make dhoklis. Whole wheat flour is excellent for diabetics as they will not shoot up your blood sugar levels as they are a low GI food. 3. Add carom seeds (ajwain).
