Eggless waffle is a simple recipe to prepare the crispy baked waffles without eggs. Serve the waffles with honey or maple syrup. Tarla Dalal has tried and updated the recipe.
Method- Combine the butter, sugar, milk and vanilla essence in a deep bowl and mix well using a whisk.
- Add the self-rising flour, salt and baking soda, mix well using a whisk.
- Add the lemon juice and mix well.
- Pre-heat a waffle iron.
- Grease the waffle iron with little oil, use 1/3 of the batter to spread it evenly into 2 waffle moulds. Put some oil over the batter and cook in a waffle maker for 8 to 9 minutes or till the waffles are crispy.
- Repeat for the remaining batter to make 4 more waffles.
- Serve immediately with honey, maple syrup or chocolate sauce.

what is eggless waffles made of? Indian eggless waffles is made from cheap and easily available ingredients in India such as 1/4 cup soft butter, 1/4 cup powdered sugar, 1 cup milk, 1/4 tsp vanilla essence or extract, 1 cup self raising flour, 1/4 tsp salt, a pinch of baking soda, 1 tsp lemon juice and butter for greasing. In a bowl put 1/4 cup soft butter.

Grease the waffle maker with little butter. Grease the bottom plate and top plate with butter. Coat waffle iron evenly with butter or it will be hard to remove the cooked waffles.

Cook in a waffle maker for 8 to 9 minutes or till the waffles are crispy. Note that cooking time will differ on each appliance. The best is to check by opening the machine and checking to see if the waffle is done. Repeat with the remaining batter to make 2 more sets of waffles. This will make a total of 6 waffles.

Use a silicone spatula or wooden spatula to remove the waffles. Don't use any sharp object or steel object to remove the waffles as they could damage your waffle iron.

Cooking time will also differ depending on the ingredients of the batter. Eg is the batter made of plain flour or rava ( semolina ).

This is the vanilla extract we used to make the waffles. We highly suggest you use this as the vanilla flavour is much richer. Indian made (sprig) gives a far richer taste than vanilla essence. NOTE, you can use either. We bought the sprig (vanilla extract) from amazon.in

Cling wrap the waffles tighly.

Put it in the zip lock bag or an air tight container and freeze it. It can be stored in the freezer for 2 to 3 months.

Remove the waffles from the freezer and defrost it for 1 hour.

Re heat the waffles in a pre heated waffle maker for 2 to 3 minutes. Serve immediately with topping of your choice.
