Simple but elegant touches make this Indian savoury waffles a recipe to cherish! There is nothing uncommon about waffles topped with stir-fried veggies, but when the waffles are given an Indian touch by making them with a methi flavoured moong batter, it becomes a treat with a difference.
Not only that, the delectable combination of stir-fried veggies also gets a special, lingering flavour by the addition of nigella seeds. The eggless dal waffle is an apt snack for diabetics and one serving of it is enough to satiate their hunger and give them a nutrient boost.
Moong Dal provides folic acid while vegetables contribute ample fibre to this dish, which is so tasty that the whole family will enjoy it. Serve these healthy Indian moong dal waffles as a satiating snack when hunger strikes in the evening. Weight-watchers and heart patients can also benefit from this protein rich snack.
Tips for moong dal waffles. 1. Add 1/4 tsp fruit salt. NOTE. First make the stir fried vegetables to put on top of your moong dal waffles. Then go ahead and add fruit salt to batter and make the moong dal waffles. 2. Mix the batter gently as you are adding fruit salt. Then immediately prepare the moong dal waffles. 3. Serve eggless moong dal waffles with green chutney. 4. You can skip adding stir fried vegetables and just have plain moong dal waffles.

For the moong dal waffles- Wash and soak the green moong dal in enough water in a deep bowl for 3 hours. Drain well.
- Combine the soaked dal and green chillies and ½ cup of water in a mixer and blend to a smooth mixture.
- Transfer the mixture into a deep bowl, add the fenugreek leaves, besan, asafoetida and salt and mix well.
- Add the fruit salt and mix gently.
- Pre-heat a waffle iron.
- Grease the waffle iron with 1/4 tsp of oil, use 1/3 of the batter to spread it evenly into 2 waffle moulds.
- Cook in a waffle maker for 10 minutes or till the waffles are crispy.
- Repeat with the remaining batter to make 4 more waffles.
For the stir-fried vegetables- Heat the oil in a broad non-stick pan and add the onion seeds and sauté on a medium flame for 30 seconds.
- Add the onions and garlic and sauté on a medium flame for 1 more minute.
- Add the capsicum and bean sprouts and sauté on a medium flame for another 2 minutes.
- Add the tomatoes, broccoli, chilli sauce and salt, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
- Divide it into 6 equal portions and keep aside.
How to proceed- Place each waffles in a serving plate and top it with one portion of the stir-fried vegetables.
- Serve immediately.

What is moong dal waffles made of ? is made from cheap and easily available ingredients in India such as 1 cup green moong dal (split green gram) with skin, 1/2 tbsp roughly chopped green chillies, 2 tbsp chopped fenugreek (methi) leaves, 2 tsp besan (bengal gram flour), a pinch of asafoetida (hing), 1/4 tsp fruit salt and oil for greasing. To make waffles in India, you need to buy a waffle machine. This is fairly cheap to buy and available on amazon.in and retail equipment stores in India for a price between Rs 2,000 and Rs 3,000.

This is what green moong dal looks like. Moong or green gram is a small ¼-inch, round, olive-green bean that is mustard or off-white coloured inside. The beans have a sweet flavour, soft texture, and are easy to digest. Green gram is available in many forms including whole, split, de-husked (yellow) and ground. Split moong beans or green moong dal is green gram that has been split but not skinned. Since the husk is not removed completely, the green colour is retained.

Soaked and drained moong dal. One cup moong dal after soaking gives 2 1/2 cups.

Grease the waffle maker with little oil. Grease the bottom plate and top plate with oil. Coat waffle iron evenly with oil or it will be hard to remove the cooked waffles.

Use 1/3 of the batter to spread it evenly into 2 waffle moulds.

Cook in a waffle maker for 10 minutes or till the waffles are crispy. Note that cooking time will differ on each appliance. The best is to check by opening the machine and checking to see if the waffle is done. Repeat with the remaining batter to make 4 more waffles. We are making a total of 6 moong dal waffles.

Ingredients for stir fried vegetables is made from 1/2 cup sliced spring onions strips, 1/2 cup capsicum strips, 1/2 cup blanched broccoli florets, 1/2 cup deseeded and sliced tomatoes, 3/4 cup bean sprouts, 1 tsp oil, 1 tsp nigella seeds (kalonji), 1 tsp finely chopped garlic (lehsun) and 1 tsp chilli sauce. Sauté on a medium flame for a few seconds.
