1 cup fresh bread crumbs
1/2 cup finely chopped and boiled mixed vegetables (carrots , french beans and baby corn)
oil for deep-frying

To Be Ground Into A Smooth Paste (using Little Water)
1/2 cup chopped coriander (dhania)
1/4 cup grated coconut
1/2 cup finely chopped onions
1 tbsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
salt to taste

How to proceed for Crunchy Bread Cutlets:

  1. To make the Crunchy Bread Cutlets, we first need to make a paste. For that, we will keep all the ingredients ready.
  2. Take a small mixer jar and put the clean and chopped coriander to it.
  3. Then, add the grated coconut.
  4. Then, add the onions. We add them for pungency.
  5. Then add the garlic.
  6. Also, add the green chilies for a kick.
  7. Finally, add some salt to taste.
  8. Add about 2 tbsps water.
  9. Blend it into a smooth paste. Keep aside.
  10. Place the bread slices on a clean, dry surface. We have used 6 big bread slices. Remove the brown crust of the bread slices carefully with a knife and discard the crusts.
  11. Tear the bread slices with your hands. The procees of grinding becomes easy if you tear the bread slices.
  12. Add the bread slices to a mixer jar.
  13. Now, blend the slices till the bread completely breaks down and results in small crumbs. These are fresh bread crumbs. We need 1 cup of fresh bread crumbs. It is better to use these than the dried, store bought ones as these will give the cutlets more crispiness.
  14. Take a large clean mixing bowl and add the prepared paste to it.
  15. Now, add the mixed vegetables to it.
  16. Add the fresh bread crumbs as well.
  17. Start mixing well till it starts to form a soft dough. If the mixture does not bind well that means you may need more breadcrumbs.
  18. Divide the mixture into 8 equal portions.
  19. Take one portion into your hand and roll it into a ball in between your palms.
  20. Slowly flatten it and shape each portion into a flat 50 mm. (2’) diameter cutlet.
  21. Repeat with the remaining mixture and keep aside.
  22. Heat enough oil in deep non-stick pan. This is for deep frying the Crunchy bread cutlets.
  23. Deep-fry a few Crunchy Bread Cutlets over a medium flame till they are golden brown in colour from both the sides.
  24. Drain Crunchy Bread Cutlets on absorbent paper.
  25. Serve Crunchy Bread Cutlets hot with green chutney and tomato ketchup.
