Carrot halwa or gajar ka halwa is a north indian sweet dish prepared from grated gajar(or carrots) cooked with sugar, ghee and spices like cardamom. A delicious dessert dish which can be served as a snack or after meal sweet! gajar ka halwa is a favorite dessert served i north india during winters garnished with chopped nuts.
Method- Heat the ghee in a deep pan, add the carrots and saute on a medium flame for 8 to 10 minutes or till the carrots turn soft.
- Add the milk and cardamom powder, mix well and bring it to a boil.
- Reduce the flame and cook till the milk is almost reduced.
- Add the sugar, mix well and cook till the mixture becomes dry. Serve hot garnished with almonds.
