Ingredients

For Stir Fried Veg
1/2 cup sweet potato (shakarkand) sticks
1 tbsp potato wedges
1/4 cup pineapple slices
1/4 cup paneer (cottage cheese) strips
1/4 cup capsicum strips
1/2 cup sliced waterchestnut
oil for frying
1 tbsp cornflour
1 tbsp plain flour (maida)
salt to taste
2 tsp dry red chilli flakes (paprika)
1 tsp soy sauce
1/2 tsp freshly ground black pepper powder
1 tbsp chopped parsley
1 tbsp chopped celery

For The Pineapple Hot Sauce
1/2 cup pineapple puree
1 cup tomato puree
1/2 tbsp honey
salt to taste
2 tsp vinegar
1 tsp soy sauce
1/2 tbsp chopped capsicum
1/2 tbsp red capsicum paste
1/2 tbsp red chilli paste
3 tsp ginger-garlic (adrak-lehsun) paste
2 tsp chopped green chillies
2 tsp tomato ketchup
2 tsp onion paste
3 tsp oil
1 tbsp cornflour mixed with 2 tbsp water

For The Garnish
roasted sesame seeds (til)
roasted and powdered peanut
chopped spring onion greens
3 tsp honey
2 tsp lemon juice
Method

  1. Combine the cornflour, plain flour, salt, red chilli flakes, soya sauce, black pepper powder, parsley, celery with water to make a thick batter.
  2. Dip all vegetables in this batter and deep fry in hot oil. Drain on an absorbent paper and keep aside.

For the pineapple hot sauce

  1. Heat the oil in a pan and add the ginger-garlic paste, green chillies and cook for a minute.
  2. Add the onion paste and saute till light pink in colour.
  3. Add the capsicum and red capsicum paste, cook for one minute. Add the salt, soya sauce, honey, vinegar, tomato puree, mix well and cook for 3 to 4 minutes.
  4. Add the pineapple puree, mix well and cook for 3 minutes.
  5. Add cornflour slurry, cook till it thickens.
  6. In a serving plate, place all stir fried vegetable, pour pineapple hot sauce.
  7. Garnish with sesame seeds, peanuts powder, spring onion, honey and lime juice.
