I''m going through a pineapple purée jelly phase. Make recommended boiled water portion of jelly ( norm is 1/2 boiled water to dissolve, then 1/2 cold water.. refrigerate)..,, so instead of the water, I''m adding a liberal portion of purée, plus a small amount of the fresh juice to thin.... freeze.... for added zest, I cover the frozen mix with a very thin layer of fresh squeezed lime. Reduce hardness by adding sugar, but the sucrose helps in that, and I prefer it harder than added sugar.
