Ingredients
Main Ingredients
- 2 tbsp oil
- 1 tbsp finely chopped garlic (lehsun)
- 2 tsp finely chopped ginger (adrak)
- 2 tsp finely chopped green chillies
- 1/2 cup broccoli floret , parboiled
- 10 french beans , cut into 25 mm.
- 1/2 cup zucchini slices , blanched
- 1/2 cup pak choi , cut into pieces
- 4 to 5 asparagus , cut into 25 mm.
- 1/2 cup green capsicum cubes
- 1/2 cup tomato puree
- 2 tsp cornflour dissolved in 1/2 cup
- a pinch sugar (optional)
- salt to taste
Method
- Heat the oil in a wok / kadhai on a high flame till it smokes.
- Add the garlic, ginger and green chillies and sauté on a high flame for a few seconds.
- Add the broccoli, french beans, zucchini, pakchoi, asparagus, capsicum and sauté on a high flame for another 4 to 5 minutes.
- Add the tomato purée and sauté on a high flame for a couple of more minutes.
- Add the cornflour mixture, sugar and salt and simmer till the gravy thickens. Serve immediately.
