Here's how to make a quick and easy Indian sabzi:

1. Choose the Right Vegetables:

  • Quick-cooking options:
    • Small cauliflower florets
    • French beans
    • Baby corn
    • Peas
    • Spinach
    • Okra (bhindi)
    • brinjal
  • Avoid: Root vegetables like potatoes and carrots take longer to cook.

3. The Quick Cooking Method:

  • Sauté: Heat oil in a pan. Add cumin seeds and let them sizzle.
  • Add aromatics: Add ginger-garlic paste (if using) and sauté briefly.
  • Add vegetables: Toss the vegetables into the pan.
  • Spice it up: Immediately add turmeric, chili powder, and a pinch of salt.
  • Stir-fry: Stir-fry the vegetables on high heat for 2-3 minutes.
  • Simmer: Add a little water (if needed) and cover the pan. Simmer for 5-7 minutes, or until the vegetables are tender-crisp.
  • Season: Add coriander powder and garam masala. Stir well.
  • Garnish: Garnish with chopped cilantro and serve hot with roti, rice, or paratha.

A healthy green vegetable to try is French Beans Chana Dal Stir Fry which is great for Diabetics as the fibre present in the French Beans binds the glucose and slows down its absorbtion preventing a rise in blood sugar levels.

  • Microwave vegetables: For some vegetables like spinach or broccoli, a quick microwave steam can save time.
  • Pressure cooker: Use a pressure cooker to significantly reduce cooking time.
  • One-pot meals: Combine vegetables with lentils or rice for a complete one-pot meal.
