Method

For the ravioli dough
 

  1. Combine the plain flour, butter and salt in a deep bowl and knead into a soft dough using enough cold water. Keep aside.

For the spinach and cheese stuffing
 

  1. Heat the oil in a broad non-stick pan, add the garlic and green chillies and sauté on a medium flame for 30 seconds.
  2. Add the onions and sauté on a medium flame for 1 minute.
  3. Add the spinach, salt and pepper, mix well and cook on a medium flame for 1 minute.
  4. Switch off the flame, add the cheese and mix well. Keep aside.

How to proceed
 

  1. Divide the spinach and cheese stuffing into 12 equal portions. Keep aside.
  2. Divide the dough into 24 equal portions.
  3. Roll 2 portions of the dough each into 75 mm. (3”) diameter circle using a little plain flour for rolling.
  4. Place a portion of the rolled dough circle on a clean, dry surface and place a portion of the spinach and cheese stuffing evenly over it. Cover it with another rolled dough circle and press it gently all over the circumference using a fork.
  5. Repeat steps 3 and 4 to make 11 more raviolis.
  6. Boil enough water, oil and salt in a deep non-stick pan, add 3 raviolis to it and cook on a medium flame for 4 minutes, while stirring occasionally. Drain and keep aside.
  7. Repeat step 6 to cook 9 more raviolis in 3 more batches.
  8. Pour ½ cup of white sauce in a baking dish and spread it evenly.
  9. Place all the raviolis and pour the remaining 1½ cups of white sauce evenly over it. Finally sprinkle the cheese and chilli flakes evenly over it.
  10. Bake in a pre-heated oven at 200ºc (400ºf) for 15 minutes.
  11. Serve immediately.

For the ravioli dough

 

    1. To make the dough for Ravioli with Spinach and Cheese in White Sauce, Combine the 3/4 cup plain flour (maida), 2 tsp butter and salt to taste in a deep bowl and knead into a soft dough using enough cold water. Keep aside.

For the spinach and cheese stuffing

 

    1. To make the stuffing for Ravioli with Spinach and Cheese in White Sauce, Heat the 1/2 tbsp oil in a broad non-stick pan.

    2. Add the 2 tsp finely chopped garlic (lehsun) and 2 tsp finely chopped green chillies and sauté on a medium flame for 30 seconds.

    3. Add the 1/4 cup finely chopped onion and sauté on a medium flame for 1 minute.

    4. Add the 1/2 cup blanched and chopped spinach (palak) (palak), salt and to taste and pepper, mix well and cook on a medium flame for 1 minute.

    5. Switch off the flame, add the grated processed cheese and mix well. Keep aside.

Hello! May I please know which cheese are we supposed to use here. Is it mozzarella cheese?

Hi Kiranpreet, you can use Mozzarella if you wish to. We have used processed .cheese for this recipe

Can this be made in microwave as well? If yes, what will the temperature and settings be?

Hi, Yes you can cook the ravioli in the microwave. Heat the water in a microwave safe bowl till hot, drop in the ravioli and cook on 100percent power for 4 minutes. drain and keep aside. Arrange in the bake dish along with the sauces and microwave for 2 to 3 minutes, till the cheese melts.
