Ingredients
10 tarts

For The Cheesy Corn Filling
4 cheese slices
2 cups boiled sweet corn kernels (makai ke dane)
1 tbsp cornflour
2 tbsp milk
2 tsp butter
1 1/2 cups milk
4 tbsp chopped olives
4 tbsp chopped jalapenos
4 tbsp finely chopped basil
salt and freshly ground black pepper (kalimirch) to taste

For The Caramelised Onions
2 cups chopped onions
2 tsp butter
2 tbsp brown sugar

For The Garnish
10 basil leaves
Method

For the cheesy corn filling

  1. Combine the cornflour with 2 tbsp of milk in a small bowl, mix well and keep aside.
  2. Heat the butter in a broad non-stick pan, add the sweet corn kernals and sauté on a medium flame for 3 minutes.
  3. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  4. Add the cheese slices, olives and jalapenos, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  5. Add the basil, salt and pepper, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  6. Add the cornflour-milk mixture, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  7. Divide the mixture into 10 equal portions and keep aside.

For the caramelised onions

  1. Heat the butter in a broad non-stick pan, add the onions and sauté on a slow flame for 5 minutes.
  2. Add the brown sugar, mix well and cook on a slow flame for 2 minutes, while stirring occasionally.
  3. Divide the mixture into 10 equal portions and keep aside.

  1. Place a tart on a clean, dry surface, fill it with a portion of the cheesy corn filling and put a portion of the caramelized onions evenly over it.
  2. Repeat step 1 to make 9 more tarts.
  3. Serve immediately garnished with basil leaves.

For the cheesy corn filling

  1. Take the cornflour in a small bowl.
  2. Add 2 tbsp of milk, mix well and keep aside. Ensure there are no lumps.
  3. Heat the butter in a broad non-stick pan.
  4. Add the sweet corn kernels and sauté on a medium flame for 3 minutes. They will turn light golden in colour.
  5. Add the milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  6. Add the cheese slices. Alternatively, you can also use grated processed cheese.
  7. Then add the olives. We have used black olives in this recipe.
  8. Add the jalapenos, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  9. Add the basil. Do not chop them and keep out for a long time or else they will turn black.
  10. Season with salt and pepper, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Be cautious with the amount of salt as cheese slice already has salt.
  11. Add the cornflour-milk mixture, mix well and cook on a medium flame for 1 minute, while stirring occasionally. It acts as a thickening agent and helps in reducing the mixture.
  12. Divide the mixture into 10 equal portions and keep aside.

For the caramelised onions

  1. Heat the butter in a broad non-stick pan, add the onions and sauté on a slow flame for 5 minutes.
  2. Add the brown sugar, mix well and cook on a slow flame for 2 minutes, while stirring occasionally.
  3. Divide the mixture into 10 equal portions and keep aside.

How to make cheesy corn tarts

Wow.. These tarts are the most amazing ones i have ever had. This savory tarts have an amazing blend of all the ingredients. The olives, Jalapenos imparts a specific taste with the corn in the cheesy white sauce. Tarts filled with this cheesy corn filling and the caramelised onions on top gives a twist in the taste. In shot this starter is totally worth the effort you put in..
