Ingredients

For Beetroot , Cucumber and Tomato Raita
1/4 cup boiled peeled and chopped beetroot
1/2 cup chopped cucumber
1/2 cup chopped tomatoes
1 1/2 cups chilled whisked low fat curds
salt to taste
1 tsp finely chopped green chillies
1 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
1 tbsp freshly grated coconut
1/4 cup finely chopped coriander (dhania)

  1. To make beetroot, cucumber and tomato raita, combine the beetroot, cucumber, tomatoes, curds, salt and green chilies in a deep bowl, mix well and keep aside.
  2. Heat a small non-stick pan on a medium flame and when hot, add the cumin seeds and dry roast for about 30 seconds.
  3. Add the asafoetida and dry roast for about 5 seconds.
  4. Pour this mixture over the raita and mix well.
  5. Add the coconut and coriander and mix well.
  6. Serve te beetroot, cucumber and tomato raita chilled.

What is a raita?

  1. What are Raitas ? Raita is a quintessential accompaniment for any Indian meal. It adds a refreshing note, making the heaviest of meals seem light and digestible. Simply put, raita means veggies and/or fruits in curd.
  2. South Indians temper the raita with mustard and red chillies, while in the North it is served with a sprinkling of spice powders. A raita can be standalone, like Tomato RaitaPineapple Raita or Onion Raita. Or, it can be a combo of fruits and veggies like Dill and Cucumber Raita.

I love this recipe so much. I remember I saw it in one of your cookbooks. That version had crushed roasted peanute. I highly recommend adding that too, then it''s perfect.

Low fat curds makes this a healthy raita with the addition of beetroot, cucumber and tomatoes. Love the peanuts and like the light pink color of the raita.
