For Vegetable Fried Rice
1 cup long grained rice (basmati)
salt to taste
5 tbsp oil
1 tsp finely chopped green chillies
2 tsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
1 tbsp finely chopped celery (ajmoda)
1/2 cup finely chopped spring onions whites
1/2 cup shredded cabbage
1/4 cup blanched french beans , cut diagonally
1/2 cup thinly sliced and blanched carrot
1/2 cup thinly sliced capsicum
1 tsp soy sauce
1/2 tsp freshly ground black pepper (kalimirch)
1/4 cup finely chopped spring onion greens
Method

For vegetable fried rice

    For vegetable fried rice
  1. To make vegetable fried rice, boil the rice. Each grain of the cooked rice should be separate. Refer our detailed recipe for chinese vegetable fried rice given below to learn how.
  2. Heat the oil in a deep pan, add the green chillies, garlic, ginger, celery and spring onion whites, mix well and sauté on a medium flame for 1 minute, while stirring occasionally.
  3. Add the cabbage, french beans, carrots and capsicum, mix well and sauté on a high flame for 3 to 4 minutes, while stirring occasionally.
  4. Add the rice, salt and soya sauce, mix well and sauté on a high flame for 2 minutes, while stirring occasionally.
  5. Add the pepper powder mix well and cook on a high flame for 1 minute.
  6. Add the spring onion greens, mix well and cook on a high flame for 1 minute.
  7. Serve the vegetable fried rice immediately with chilli sauce, soya sauce and chillies in vinegar.

For cooking rice for veg fried rice

  1. For cooking long-grained rice for Chinese vegetable fried rice recipe | veg Chinese fried rice | Indo-Chinese veg fried rice | Indian style Chinese vegetable rice |  wash 1 cup of rice thoroughly under running water until you get clear water. The removal of starch from rice helps in getting separate grains after cooking.
  2. Transfer in a deep bowl and soak in enough water for 30 minutes.
  3. Drain with the help of a strainer and keep aside.
  4. Boil 4 cups of water in a deep non-stick pan.
  5. Add salt to taste.
  6. Furthermore, add 1 tbsp of oil and mix well.
  7. Add the rice to the boiling water and mix well.
  8. Cook on a medium flame for 8 to 10 minutes or till the rice is 85% cooked, while stirring occasionally.
  9. Strain it using a strainer and let the water drain out. This will give you around 3 cups after cooking. Do not overcook the rice or else they will turn soft and mushy.

  11. Pour some cold water on the rice to stop further cooking. Let all the water from the rice drain out ensuring that the rice does not contain any moisture.
  12. Add the remaining 1 tbsp of oil. This helps in preventing the rice from sticking together.
  13. Toss the rice in it. Ensure each grain is coated well with oil.
  14. Spread the cooked rice on a flat surface or a big plate and allow it to cool for 1 to 2 hours.

  2. Heat 3 tbsp of oil in a wok / kadhai over medium-high flame. Select oil with a high smoke point preferably use sesame oil, vegetable oil or peanut oil for best results. Once the oil is hot, add the finely chopped green chillies, garlic and ginger. You can increase or decrease the quantity as per your preference.

  8. Finally, add the capsicum. To make it more colorful, you can even add bell peppers .
  9. Mix well and sauté on a high flame for 3 to 4 minutes, while stirring occasionally. Stir-fry the vegetables without overcooking them or else they will lose their crunch.
  10. Now add the rice. Ensure that cooked rice does not have any lumps in it and each grain is separated. You can even make use of leftover rice.
  11. Add the salt to taste. Since, we have added salt while cooking rice and also, soy sauce contains salt, be careful while adding salt at this stage.

  12. And add the soya sauce.
  13. Mix gently and sauté on a high flame for 2 minutes, while stirring occasionally. Do not stir too much otherwise the rice grains may break.
  14. Add the pepper powder, mix well and cook on a high flame for 1 minute.
  15. Add the spring onion greens to the Vegetable Fried Rice, mix well and cook on a high flame for 1 minute.

Tips to make perfect vegetable fried rice

  1. Add chilli sauce or schezuan sauce for a spicy taste.

  4. To add protein, toss in paneer, tofu or soya chunks.
  5. Egg lovers can add fried egg, scrambeled egg or hardboiled egg.
