To make vegetable cheese rice, firstly boil and drain basmati or long grained rice and keep aside. Next, make chilli garlic paste by dry roasting Kashmiri red chilli on a non-stick tava, once the chillies cool down transfer them to a blender. Add garlic and salt. Blend using little water. This chilli garlic paste will help giving flavor to the rice. Further to temper, take oil in a non-stick pan, Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute. Add the red chilli-garlic paste and sauté on a medium flame for 1 minute. Add the french beans, potatoes, carrots, green peas and capsicum. Mushroom, baby corn, broccoli are some other vegetables that you can add in this recipe of garlicky vegetable and cheese rice. Add the tomatoes, mix well and cook on a medium flame for 1 minute. Add the rice, curds and salt. To make it even nutritious use brown rice instead of white rice and curd will help balance the tang and spice of chillies. Remove from the flame, add the cheese and mix well.
Serve Indian style cheesy vegetable rice hot garnished with cheese. Cook the rice to the right consistency ensuring that it does not become mushy. For garlicky vegetable and cheese rice- To make garlic vegetable and cheese rice, heat a non-stick tava (griddle) and dry roast the red chillies on a medium flame for 1 to 2 minutes.
- Combine the roasted red chillies, garlic and 2 tbsp of water and blend in a mixer to a smooth paste. Keep aside.
- Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
- Add the red chilli-garlic paste and sauté on a medium flame for 1 minute.
- Add the french beans, potatoes, carrots, green peas and capsicum, mix well and sauté on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the tomatoes, mix well and cook on a medium flame for 1 minute.
- Add the rice, curds and salt, mix well and cook on a slow flame for 2 minutes, while stirring occasionally.
- Remove from the flame, add the cheese and mix well.
- Serve the garlic vegetable and cheese rice hot garnished with cheese.

To make vegetable cheese rice recipe | Indian style cheesy vegetable rice | garlic vegetable cheese rice | we will require cooked rice. For that wash around ¾ cup of rice thoroughly. We have used long grained variety of rice.

Soak them in 3 cups of water for 30 minutes. Cover with a lid and keep aside.

Drain the rice with the help of a strainer.

Boil a vessel full of water, add 1 tbsp of oil and salt.

Add the rice to the boiling water.

Cook till the rice is al dente, stirring once or twice in between. The rice grain must be fully cooked yet firm.

Pour into a colander and let the water drain out.

Spread the cooked rice on a flat surface to cool.

To prepare vegetable cheese rice recipe | Indian style cheesy vegetable rice | garlic vegetable cheese rice | heat a non-stick tava (griddle) and dry roast the red chillies on a medium flame for 1 to 2 minutes. Mix well and sauté on a medium flame for 1 minute or until the onions are soft.

Add the red chilli-garlic paste and sauté on a medium flame for 1 minute.

Add french beans.

Add green peas. Mushroom, baby corn, broccoli are some other vegetables that you can add in this recipe of garlicky vegetable and cheese rice.

Add capsicum. Bell peppers can also be added to make the garlicky vegetable rice more colorful.

Mix well and sauté on a medium flame for 2 to 3 minutes, while stirring occasionally.

Add tomatoes, mix well and cook on a medium flame for 1 minute.

Add rice. While we have used white rice, to make it nutritious, you can use brown rice.

Add curd and salt. Curd helps in reducing the heat from chillies and balance the tang in the recipe.
