Ingredients


For Upvas Aloo Bhaji
1 1/2 tbsp ghee
2 cups boiled potato cubes
1 tsp cumin seeds (jeera)
1/2 tsp ginger (adrak) paste
2 tsp finely chopped green chillies
3 tbsp coarsely crushed peanuts
rock salt (sendha namak) to taste
1 tsp lemon juice

For The Dosa
1 cup sanwa millet (sama)
2 tbsp sago (sabudana)
1 tsp ginger (adrak) paste
1 tsp finely chopped green chillies
2 tsp finely chopped coriander (dhania)
rock salt (sendha namak) to taste
8 tsp oil for cooking

Method

For upvas aloo bhaji

  1. To make {span class="bold1"}upvas aloo bhaji{/span}, heat ghee in a deep nonstick pan.
  2. Add cumin seeds, ginger paste and green chillies and saute on medium flame for a minute.
  3. Add coarsely crushed peanuts, boiled potatoes, salt to taste and lemon juice. Cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  4. Serve hot with {span class="bold1"}upvas dosa{/span}.

For dosa

  1. To make {span class="bold1"}upvas masala dosa{/span}, combine sanwa millet and sabudana in a mixer and grind it till fine powder.
  2. Transfer the mixture into a deep bowl and add ginger paste, chopped green chillies, coriander, salt and 2 cups of water to make dosa batter. Mix well.
  3. Heat a non-stick tava (griddle) till hot, grease with little oil.
  4. Sprinkle a little water on the tava (griddle) and wipe it off gently using a muslin cloth.
  5. Pour the batter using a ladle from the edges to the centre and tilt the tava (griddle), in a circular motion to make a round dosa.
  6. Cook the dosa on medium flame for 2 to 3 minutes until it becomes brown and evenly cooked.
  7. Put 1 tsp oil and flip the dosa and cook on medium flame for a minute till crispy.
  8. Spread little upvas bhaji evenly on the dosa and fold in to half.
  9. Repeat steps 3 to 8 to make 7 more dosas.
  10. Serve {span class="bold1"}upvas masala dosa{/span} with upvas peanut curd chutney.
