Spring vegetable risotto for babies and toddlers is a traditional Italian dish makes a mildly-spiced meal for babies who are fond of bland yet tasty food. Authentically it’s made using Arborio rice, but here we have made use of regular variety of rice for the sake of convenience.

In Vegetable risotto for toddlers rice along with vegetables is cooked in an open pan and finally topped with cheese to get that burst of flavours. The vegetables provide vitamins, folic acid and fibre, while the cheese adds protein and calcium to your baby's diet.

While cheese is good for children, do not add in huge quantities because it takes too long to digest and your baby might refuse other foods during that time. Ingredients

For Spring Vegetable Risotto For Babies and Toddlers
2 tbsp finely chopped spring onions whites
2 tbsp rice (chawal) , washed and drained
1 tsp oil
1 tbsp finely chopped onions
1 tsp garlic (lehsun) paste
2 tbsp grated carrot
1 tbsp small broccoli florets
1 tbsp finely chopped french beans
restricted quantity of salt
1 1/2 tbsp grated processed cheese

  1. To make spring vegetable risotto for babies and toddlers , heat the oil in a deep non-stick pan, add the onions and garlic paste and sauté on a medium flame for 1 minute.
  2. Add the rice and ¾ cup of water, mix well and cook on a medium flame for 4 to 5 minutes or till the rice is cooked.
  3. Add the carrot, broccoli, french beans, spring onion whites and ½ cup of water, mix well and cook on a medium flame for 2 minutes or till the vegetables turn soft, while stirring occasionally.
  4. Add the salt and cheese, mix well and cook on a medium flame for 1 more minute or till the cheese melts. Mash it lightly using a potato masher.
  5. Serve the spring vegetable risotto for babies and toddlers lukewarm.

  7. All the equipment, feeding bowls and spoons used for cooking and serving baby food must be well-sterilized before using.

  2. Drain the excess water using a strainer and keep the washed and drained rice aside. 
  3. Next to make Vegetable Risotto for Toddlers take a deep non-stick pan. Pour oil in it and allow it to heat. 
  4. Once the oil is hot, add finely chopped spring onion whites to it. Try and use only finely chopped spring onions, as the baby is approaching 12 months and not yet ready for big chunks of veggies. 
  5. Add the garlic paste for added flavour. Now is the time to get your little one used to some strong flavours as well. However your baby doesn’t like garlic, avoid it. 
  6. Saute on a medium flame for 1 minute. 
  7. Add the washed and drained rice.

  9. Mix well using a ladle, allow it to cook on a medium flame for 4 to 5 minutes. The rice at this stage should be completely cooked. It may take a 1minute extra to cook depending on the quality of the rice. 
  10. Now add the vegetables of Vegetable Risotto for Kids. First add the carrots. Prefer grated carrots, as they do not need much cooking and are easier to chew by babies. 
  11. Next add broccoli. You can add cleaned and washed very small florets or finely chop them. 
  12. Add cleaned and washed finely chopped French beans. You can add finely chopped cauliflower also if you wish to. 
  13. Again add ½ cup of water for cooking. This time the water is to cook the vegetables so that they turn soft and the baby can chew them easily. 
  14. Mix well using a ladle.
  15. Cook on a medium flame for 2 minutes. Ensure that at this stage the vegetables are cooked and soft. Keep stirring occasionally as needed.
  16. Next add little salt. This is optional though. Add restricted quantity of salt only if advised by your pediatrician.
  17. Finally add some cheese for enhanced flavour. Grate it and add it to the rice.
  18. Mash the Easy Vegetable Risotto for Kids using a potato masher lightly so the risotto becomes smooth and easy for baby to chew.

    4 tbsp curd (dahi) , preferably made with cow’s

    3. Add approx. 1 cup of water and mix well. Cover it with a lid and cook on a medium flame for 10 to 12 minutes or till the rice is overdone, all the water has been evaporated and it can be easily mashed, while stirring occasionally.
    4. Cool the rice slghtly, add the curds and coriander and coarsely blend it in a mixer.
    5. Serve the curd rice for babies and toddlers immediately.
