Ingredients


For The Stuffing
1 1/2 cups boiled hakka noodles
2 tbsp oil
1 tbsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
3/4 cup sliced onions
3/4 cup shredded cabbage
3/4 cup carrot juliennes
3/4 cup capsicum juliennes
1/2 cup finely chopped spring onion whites and greens
3 tbsp schezwan chutney
1 tbsp tomato ketchup
1 tsp soy sauce
1 tsp red chilli sauce
1/2 tsp chaat masala
1 tsp vinegar
salt and freshly ground black pepper (kalimirch) to taste

Other Ingredients
2 cups dosa batter
4 tbsp butter for cooking
4 tbsp schezwan chutney
4 tbsp grated processed cheese
1/4 cup finely chopped spring onion greens for sprinkling

For Serving
coconut chutney
sambar

Method

For the stuffing

  1. To make {span class="bold1"}spring roll dosa recipe{/span}, heat the oil in a broad non-stick pan, add garlic and ginger, sauté on a medium flame for a few seconds.
  2. Add the onions and sauté on a medium flame for 1 minute.
  3. Add the cabbage, carrot and capsicum and sauté on a medium flame for 2 minutes.
  4. Add the spring onion whites and greens, hakka noodles, schezwan chutney, tomato ketchup, soya sauce, chilli sauce, vinegar, chaat masala, salt and pepper.
  5. Mix well and cook on a medium flame for 3 to 4 minutes, while stirring continuously.
  6. Divide the stuffing into 4 equal portions. Keep aside.

How to proceed

  1. Heat a non-stick tava (griddle), grease with 1/4 tsp oil and sprinkle a little water on the tava, wipe it off gently using a muslin cloth.
  2. Pour a ladleful of the batter on hot tava and spread it in a circular motion to make a 225 mm. (9 inch) diameter thin dosa.
  3. Add 1 tbsp butter and 1 tbsp of schezwan chutney over the dosa and spread it evenly. Cook on a medium flame till the dosa turns light brown in colour and crisp.
  4. Spread a portion of the stuffing over the dosa, add grated cheese and spring onion greens.
  5. Cook on a medium flame for 1 minute. Cut the dosa vertically in 3 equal portions and fold over to make a spring roll.
  6. Repeat steps 1 to 5 with the remaining batter and stuffing to make 3 more dosas.
  7. Serve {span class="bold1"}spring roll dosa{/span} immediately with coconut chutney and sambar.
