What is Hakka Noodles?



Hakka noodles is a Chinese preparation where boiled noodles are stir fried with sauces and vegetables or meats. A hakka noodle is made from unleavened dough( rice or wheat flour) that is cooked in a boiling liquid. Depending upon the type, noodles may be dried or refrigerated before cooking. A typical preparation involves splashing of oil to a large pot of boiling salted water and cooking the noodles as directed on the package. Drain the noodles in a colander, place it in a large bowl, and while still warm, toss with one tbsp oil so that the noodles don't stick to one another. Now take a wok, add 4 tbsp oil, and sauté the chopped onions and bell peppers till they become soft and glazed. Add the scallions and toss well. Add salt and 5-6 tbsp soy sauce (adjust to your taste), then add the prepared schezwuan sauce and turn off the heat. Gently pour the sauce over the noodles while still hot. Garnish with some chopped spring onion greens and serve hakka noodles hot!

Boiled hakka noodles
To boil hakka noodles, boil enough water in a deep broad pan. Add salt and little oil and once the water starts boiling, add the noodles and mix well. Boil the noodles they are cooked well, which may take upto 10-15 minutes. Once they are cooked well, drain them and rinse them with cold water to avoid further cooking sue to steam present between the noodles. Use as required.
Parboiled hakka noodles
Parboiled hakka noodles are half cooked noodles which are 70-80% cooked. To parboil hakka noodles, boil enough water in a deep broad pan and add a pinch of salt and little oil. Add the noodles and boil they are 70-80% cooked. Drain and rinse with cold water to avoid further cooking. These noodles then can be used in variety of dishes like American Chopsuey where these are chopped and deep fried.

How to select Hakka Noodles

Hakka noodles should be firm and not lumpy. The vegetables and the noodles should be cooked properly and the blend of sauces added should be in right proportions for a delectable hakka Noodles.
