Makes 8 spring rolls
- To make {span class="bold1"}rice paper dumplings{/span}, heat the oil in a wok or a deep non-stick kadhai on a high flame.
- Add the garlic and ginger, sauté on a high flame for few seconds.
- Add all the remaining vegetables, noodles and mix well.
- Add schezwan chutney, red chilli sauce, soya sauce, vinegar and salt to taste.
- Sauté on a high flame for 2 minutes.
- Garnish with spring onions and keep aside.
- Take a sheet of rice paper and dip it in water for few seconds or till it softens.
- Place it on a flat, dry surface and put a portion of the stuffing on one edge of the wrapper and fold to make a spring roll.
- Repeat steps to make remaining 7 rice paper dumplings.
- Heat little oil in a broad non-stick pan, cook the dumplings from both the sides until golden brown and crisp.
- Garnish with sesame seeds and serve the {span class="bold1"}rice paper dumplings{/span} hot.
