For fried egg masala
 

  1. To make fried egg masala recipe, heat oil in a deep non-stick pan, break one egg at a time and sprinkle some salt and pepper to taste.
  2. Flip the egg and cook it on the other side on a medium flame until light golden brown. Drain well and remove on a plate.
  3. Repeat steps 1 and 2 to make 4 more fried eggs. Keep aside.
  4. In the same oil, add cinnamon stick, cardamom, star anise, cloves, cumin seeds, green chillies and onions.
  5. Sauté on a medium flame for 2 to 3 minutes. Add the tomatoes and sauté again for 2 minutes.
  6. Add the prepared masala paste and salt to taste, mix well and cook on a medium flame for 2 to 3 minutes.
  7. Add ½ cup hot water and mix well. Add the fried eggs and cover and cook on a medium flame for 5 to 8 minutes.

This is my go-to jiffy lunch curry recipe. If I forget to buy vegetable or am in a mood to eat eggs, I make this sumptuous omelette curry. So easy to make!! Thank you tarla ji for the recipe.
