Ingredients

For Egg and Vegetable Quesadilla
3 whole wheat flour (gehun ka atta) leftover rotis
3 tsp oil for cooking

To Be Mixed Into Egg Mixture
6 egg white
1/2 tsp dried mixed herbs
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp peri peri masala

To Be Mixed Into Veggie Mixture
1 cup thinly sliced onions
1/2 cup thinly sliced coloured capsicum
1 tbsp finely chopped coriander (dhania)
salt and freshly ground black pepper (kalimirch) to taste
Method

For egg and vegetable quesadilla

    For egg and vegetable quesadilla
  1. To make egg and vegetable quesadilla recipe, divide the egg mixture into 3 portions. Divide the veggie mixture into 3 portions and keep aside.
  2. Heat ½ tsp oil in a broad nonstick pan, pour one portion of the egg mixture and spread it evenly to make 9 inch diameter circle.
  3. Place a roti over the egg and slightly press it. Flip it gently and put one portion of the veggie mixture on half side of the quesadilla.
  4. Fold it to make a semi-circle and then apply ½ tsp oil on both the sides.
  5. Cook the quesadilla on a medium flame until it becomes golden brown from both the sides.
  6. Cut it into two equal portions. Repeat steps 2 to 6 make 2 more quesadillas.
  7. Serve egg and vegetable quesadilla recipe immediately.
