Ingredients

For The Filling
1 packet (70 gms) maggi noodles
1 cheese slice
1/4 cup grated carrot
1/4 cup finely chopped spring onions whites and greens
1 tsp finely chopped green chillies
salt to taste

4 tsp plain flour (maida)
oil for deep-frying

  1. Boil 1½ cups of water in a deep non-stick pan, add the maggi noodles, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  2. Add the maggi masala, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  3. Add the cheese slice and mix well.
  4. Transfer the mixture into a deep bowl and allow it to cool completely.
  5. Once cooled, add the carrot, spring onions, green chillies and a little sat and mix well. Keep aside.

  1. Combine the plain flour along with 4 tsp of water in a small bowl and mix well. Keep aside.
  2. Cut each samosa patti into 3 to get 75 mm. X 62 mm. (3" x 2½") rectangular pieces. You will get 39 pieces in all.
  3. Place a piece of the samosa patti on a flat dry surface and place a portion of the filling at one end.
  4. Roll the samosa patti to form a roll and seal all the edges using the plain flour-water mixture.
  5. Repeat steps 3 and 4 to make 38 more rolls.
  6. Heat the oil in a deep non-stick kadhai and deep-fry a few rolls at a time, till they turn golden brown in colour from all the sides.
  7. Drain the cheesy maggi rolls on an absorbent paper.
  8. Serve the cheesy maggi rolls immediately with chilli sauce.

For the filling of cheesy maggi rolls

  1. To make the filling for cheesy maggi rolls, boil 1½ cups of water in a deep non-stick pan. Do not add more water or else the maggi would be watery in turn making the rolling of rolls difficult.
  2. Add the maggi noodles and mix well. You may use any other instant noodles of your choice.
  3. Cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  4. Add the maggi masala. To perk it up, you can also add other dry spices or spice-mixes like peri peri masala, chilli powder, cumin powder etc.
  5. Mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  6. Add the cheese slice. It can be swapped with grated processed cheese.
  7. Mix well.
  8. Transfer the mixture into a deep bowl and allow it to cool completely. This also helps in thickening the filling.
  9. Once cooled, add the carrot. You can use any veggies of your choice like cabbage, onions, french beans, corn, capsicum, etc.
  10. Add spring onions. These vegetables provide an added crunch.
  11. Add green chillies and a little salt.
  12. Mix well and our cheesy maggi rolls filling is ready. Keep aside.

  1. To prepare the cheesy maggi rolls, in a small bowl, take plain flour.
  2. Add 4 tsp of water mix well and our plain flour-water mixture is ready. Keep aside.

  4. Place a piece of the samosa patti on a flat dry surface. Also, you can use bread slices instead of samosa patti to prepare the cheesy maggi rolls.
  5. Place a portion of the cheesy maggi filling at one end.
  6. Roll the samosa patti to form a roll. Press it lightly while rolling to get a stiff roll.
  7. Seal all the edges using the plain flour-water mixture. This will ensure the filling does not come out while frying.
  8. Repeat steps 5 to 8 and make 38 more rolls.
  9. Heat the oil in a deep non-stick kadhai and deep-fry a few rolls at a time. Do not overcrowd the pan or else the temperature of the oil will drop them substantially resulting in uneven cooking.
  10. Flip and fry till they turn golden brown in colour from all the sides.
  11. Drain the cheesy maggi rolls on an absorbent paper.
  12. Repeat step 10 to 12 and fry all the cheesy maggi rolls similarly.
  13. Serve the cheesy maggi rolls immediately with chilli sauce.

Hello! The recipe is really good but what do you mean by replacing the samosa patti with bread slices?

Tarla Dalal    Hi Antasha, you can use plain while bread to make the rolls, you can flatten the white bread slice with a rolling pin and use it instead if patti to make these cheesy maggi rolls.

This starter turned out to be so good. Everyone loved it. And that was really quick to prepare too. I however preferred to add carrot and onion while the noodles were warm so I could mix them better. Maggi dsnt stay as flowy after cooling down.

Excellent. I also tried your cheese slices and herb rolls. One query . I am in Delhi. I can''t get samosa Patti anywhere in Delhi. Can you suggest. Thanks

Tarla Dalal    Hi, Samosa Patti will be available in any big super market in frozen section and if you yet cannot find it, you can make it at home. 1 cup plain flour (maida) 1½ tbsp oil ½ tsp salt Other ingredients 2 ½ tsp oil Plain flour (maida) for rolling 1. Combine the plain flour, oil and salt in a deep bowl and knead into a firm dough using approx. ¼ cup of water. 2. Divide the dough into 10 equal portions . 3. Roll a portion of the dough into a 175mm. (7”) diameter circle using a little plain flour for rolling. Keep aside. 4. Roll 1 more portion of the dough into a 175mm. (7”) diameter circle using a little plain flour for rolling and spread ¼ tsp of oil evenly over it and sprinkle little plain flour. 5. Put the rolled portion over the dusted circle and roll again into a 200 mm. (8”) diameter circle. 6. Heat a non-stick tava (griddle) and cook it on a medium flame for 30 seconds on each side. 7. Place it on a clean, dry surface and cut 12.5mm.(1/2”) from both the ends and then cut into three equal long strips of 50 mm. (2”) each to get 6 strips. 8. Repeat steps 3 to 7 to make 24 more samosa pattis. 9. Store in freezer bag and use as required.

This starter is really interesting and unique. cheesy maggie rolls, instant , chessy and quick. The readily available samosa patti makes it more easier. The spring onions and carrot gives a nice crunch.
