Ingredients

For The Dough
1 cup whole wheat flour (gehun ka atta)
1 cup plain flour (maida)
salt to taste
1 tsp oil for kneading
plain flour (maida) for rolling

To Be Mixed Into A Stuffing
1 cup grated paneer (cottage cheese)
1 cup grated cauliflower
1/4 cup finely chopped onions
1 1/2 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
salt to taste
freshly ground black pepper (kalimirch) to taste
1/4 tsp garam masala
1 tsp chaat masala

3 1/2 tsp butter for cooking
Method

  1. Combine all the ingredients in a deep bowl and knead into a soft dough.
  2. Divide the dough into 7 equal portions. Keep aside.

  1. Divide the stuffing into 7 equal; portions. Keep aside.
  2. In a small bowl add plain flour and approx. 1/4 cup of water and whisk well to make a thick paste. Keep aside.
  3. Roll a portion into a 225 mm. (9”) diameter circle using a little plain flour for rolling.
  4. Place one portion of the stuffing in the centre and fold 2 opposite corners of the roti over the filling, overlapping them slightly.
  5. Now fold the remaining 2 sides to seal the stuffing well.
  6. Heat a non-stick tava (griddle) and cook the paratha on a slow flame, using 1/2 tsp butter to cook each paratha till they are golden brown in colour from both the sides.
  7. Repeat steps 3 to 6 to make 6 more parathas.
  8. Serve immediately.

Cauliflower and paneer lifafa Paratha.. The grated cauliflower and paneer gives a nice soft texture in every bite.. the spice is also balanced with corainder flavour. Kids also loved this paratha.. with tomato ketchup
