To make aloo paneer chaat, heat the oil on a non-stick tava (griddle), add the potatoes and cook on a medium flame for 8 to 10 minutes or till the potatoes are brown from all the sides, while stirring occasionally. Slide the potatoes around the circumference of the tava (griddle). Add the green peas and ginger in the same oil, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Add the paneer, salt, chaat masala, green chillies and lemon juice, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Slide the potatoes back to the centre of the tava (griddle) and toss well with all the other ingredients. Serve immediately garnished with coriander.

Ingredients

For Aloo Paneer Matar Chaat
2 cups baby potatoes , (unpeeled) boiled and cut into halves
2 cups paneer (cottage cheese) cubes
1/2 cup boiled green peas
3 tbsp oil
1 tbsp finely chopped green chillies
1 tsp ginger-garlic (adrak-lehsun) paste
1 tbsp sweet chutney
2 tsp green chutney
1 1/2 tsp chaat masala
1 tsp lemon juice
1 tbsp finely chopped coriander (dhania)
salt to taste
Method
    Method
  1. Heat the oil in a broad non-stick pan, add the paneer and salt and sauté on a medium flame for 3to 4 minutes. Drain well on an absorbent paper and keep aside.
  2. In the same oil , add the ginger- garlic paste, green chillies and sauté on a medium flame for few seconds.
  3. Add the green peas, potatoes and salt and mix well and cook on a medium flame for 3 to 4 minutes. While stirring occasionally.
  4. Combine the paneer and green peas-potato mixture in a deep bowl, add the sweet chutney, green chutney, chaat masala, lemon juice and coriander and mix gently.
  5. Serve immediately.

What is aloo paneer matar chaat made of?

  1. How to select baby potatoes

  1. Baby potatoes are the potatoes which are removed from the soil before they are fully developed/ grown. Due to this, you will find that baby potatoes have a sweeter flavour.
  2. Ensure that the baby potatoes are firm and free from dirt or any blemishes. 
  3. Check that the skin is smooth and doesn't have mild green patches.
  4. If you are buying them in packet, ensure the bag is perforated. Many times if the plastic bag is not perforated, it can cause a build up of moisture and that can negatively affect the potatoes.

How to make paneer at home

  1. To make paneer, rinse a deep non-stick pan with ¼ cup of water and quickly simmer it for 2-3 minutes. This will prevent milk from getting burnt as the water forms a protective layer between the pan and milk. This is generally done in stainless steel pans but, if you have an old non-stick pan it is advisable to make this extra effort so, that the milk does not burn.
  2. Rotate the pan in a clockwise motion, so the water spreads evenly in the pan. Discard the water and pour 2 liters of full fat-milk. Full fat milk is highly recommended while making paneer as it yield more chenna after curdling resulting into a thick block of paneer.

How to make sweet chutney
