It is gluten-free, which means that even gluten-sensitive people can enjoy it. Rich in protein, which is good fat, the gluten free almond flaxseed bread loaf is also an ideal snack for weight loss, and for athletes. Eggs add in the necessary protein and almonds lend enough protein along with fibre, thus making it a wise choice for weight-watchers. To make almond flax bread with eggs, break the eggs in a deep bowl and beat it using a fork. Keep aside. Blend the almonds in a mixer till smooth. Transfer the almond mixture into a deep bowl, add all the remaining ingredients along with the beaten eggs and mix well using a spatula. Grease a 175 mm. By 82.5 mm. (7“× 3. 5 “) loaf tin with melted butter. Pour the mixture into the greased loaf tin and bake in a pre-heated oven at 150ºC (300ºF) for 35 to 40 minutes.   11. Add ½ tsp of apple cider vinegar. 
  12. Add the beaten eggs.

  14. Grease a 175 mm. x 82.5 mm. (7” × 3. 5”) loaf tin with melted butter. This is for ease of demoulding the bread loaf after baking.

  16. Bake in a pre-heated oven at 150 ºC (300ºF) for 35 to 40 minutes.
  17. Cool completely and demould the almond flax bread with eggs by inverting the tin and tapping it gently on a chopping board. Finally turn the bread upside down. 
  18. Place the bread loaf on the chopping board and cut into 13 equal slices using a sharp serrated knife.

Great nutrient dense bread made with the super ingredients. Good in healthy fats and proteins, i have this bread as a snack often just as it is and at times add some peanut butter .
