  3. Cool and blend them to make a smooth puree.

  3. Cover with a plastic film and refrigerate for 15 minutes.
  4. Roll out into 9 diameter circle with (¼ inch) thickness and cut out cookies using a cookie cutter.
  5. Re-roll the scraps of dough to make more cookies and place them on a baking tray (line the cookie sheet with greased proof paper).
  6. Bake in a pre-heated oven at 180ºc (360ºf) for 15 minutes or till the cookies are golden brown.
  7. Cool and store the soya date cookies in an airtight container and use as require.
