Cut it using a cookie cutter, in desired shape. Keep doing till the dough is over and you get 26 cookies in total. Place 13 cookies on a baking tray and bake it in a pre-heated oven at 180°C (360°F) for 12 minutes. Cool completely. Keep aside. Then make the icing and decorate the gingerbread cookies.

- First add soft butter to a deep bowl. We are using soft butter because it becomes easier to beat it till it is light and fluffy if soft.
- Add the brown sugar and honey to it. The brown sugar has molasses in it which gives the cookies a rich, caramel taste.
- Mix well using a whisk for 1 to 2 minutes till light and fluffy.
- Now add the baking powder, baking soda, dried ginger powder, cinnamon powder, cloves powder and nutmeg powder to the butter. Cinnamon, nutmeg and ginger are warm flavors that really go well together in cookies.
- Mix this well using a whisk till add the spices and powders are mixed thoroughly.
- Now add the plain flour and mix well. For such a recipe, we always have to add the dry ingredients to the wet ingredients in the end.
- Knead this into a dough without using any other liquid. The dough should come together well because of the butter.
- Cover it with a lid and refrigerate it for 30 minutes. This is a very important step. Chilling the cookie dough controls the amount the cookie spreads, concentrates the flavor and gives a chewy texture.
- Remove the dough from the fridge and place the dough on a flat, dry surface dusted with plain flour.

- Here we are going to make a simple sugar icing. For this, combine the sugar and water in a small bowl.
- Mix it well till the sugar has completely melted and it forms a thick liquid.
- Pour this into a small piping bag. If you do not have a piping bag, you can use a zip lock bag, cut a little hole in the corner and use that as a piping bag.
- Place all the cookies, on a clean dry surface.
- Decorate the cookies using the icing as desired. For example for the gingerbread man, you can make a face and clothes.
- Allow it to dry for 10 minutes so that the icing hardens.
