Sukhi subzis are subzi with hardly any water content present. They are best eaten with roti, puri or paratha and taste amazing when served along with a bowl of dal/kadhi.

Dry subzis are generally combined with batata (potato) to make delights like Kobi Batata Nu Shaak, Tendli Batata nu Shaak, Karela Bateta Nu Shaak.
