Method

  1. Dissolve the yeast and sugar in 2 tablespoons of lukewarm water and leave aside for 10 minutes or until the yeast begins to ferment.
  2. Add the wheat flour,  mint and salt to this liquid and knead into a soft dough, using enough water until it is smooth and elastic (approx. 5 to 7 minutes).
  3. Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx. 15 to 20 minutes).
  4. Press the dough lightly to remove the air.
  5. Divide the dough into 5 equal portions and roll out one portion of the dough into a 150 mm. (6") diameter circle with the help of a little flour.
  6. Cook the kulcha on a tava (griddle) over a medium flame using soya oil till both sides are golden brown. (the kulchas should puff up like phulkas).
  7. Repeat with the remaining portions to make 4 more kulchas.
  8. Serve pudina kulcha  hot.

Yeast mixture for the dough

 

    1. For the yeast mixture for the dough, add 1 tsp instant dry yeast in a small bowl.

    2. Add a pinch of sugar.

    3. Add 2 tablespoons of lukewarm water.

    4. Mix well.

    5. Cover it with a lid and keep aside for 10 minutes. Keep aside.

    2. Add 1/2 cup finely chopped mint leaves (phudina).

    3. Add 1/2 tsp salt.

    5. Mix well.

    6. Add water gradually for kneading.

    7. knead into a soft dough.

    8. Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx. 15 to 20 minutes).
