Paratha or stuffed paratha are sumptuous Indian flat-breads that can be relished with curd, pickle, raita or even sabji. They can be as simple as the plain paratha or something as filling as the mixed vegetable paratha or the rajgira paneer paratha. Below are some of my favourite stuffed paratha with cheese recipes that you can relish for breakfast or lunch :
-
To make dough for pizza paratha, in a deep bowl, take ½ cup of maida or refined flour. It will help in making soft parathas so, you can easily pack the pizza paratha in tiffin for lunch and not be worried of them turning chewy.
-
Add equal quantities of whole wheat flour to keep the pizza paratha soft yet healthy. You can even use only whole wheat flour to prepare pizza paratha.
-
Add salt to taste. Gradually add water to form a dough. The quantity of water will depend upon the quality of flour.
-
Knead into a soft dough using enough water. While making stuffed paratha always knead the dough little soft so it is easy to stuff and roll the parathas.
-
Divide the dough into 4 equal portions.
-
To prepare the stuffing for the cheese pizza paratha, in a deep bowl take ¾ cup finely chopped capsicum. They give a nice bite to the pizza paratha recipe. Alternatively, you can add any vegetables of your choice like jalapeno, spring onion, cabbage, carrot, corn etc.

Add grated processed cheese. You can even use a combination mozzarella, cheddar cheese along with processed cheese to make the pizza paratha.
-
Add tomato ketchup to give a tangy flavour to our pizza paratha stuffing. Instead of tomato ketchup, you can make use a combination of ketchup and chilli sauce or make use of pizza sauce. Even that is available in the market in packaged form but, if you want to make homemade pizza sauce then check out this recipe Pizza Sauce or Italian Pizza Sauce of Jain people can refer to this recipe of Jain Pizza Sauce.
-
Add dry red chilli flakes (paprika). The cheese vegetable stuffing can be made spicier to suit your taste buds.

Add the dried oregano. Other seasonings like Italian dried herbs, dried basil can also be added to perk up the stuffed vegetable cheese paratha.
-
Add finely chopped black olives. Ensure that all the veggies are either finely chopped or grated. This helps in rolling the pizza paratha easily.

Add salt to taste. Add a very little salt or skip adding salt as cheese and sauce already has it. To increase the health quotient, you can toss in some grated paneer of tofu to the pizza paratha stuffing.
