Ingredients
Main Ingredients
1/2 cup pineapple cubes
1/2 cup fresh pineapple juice
1/2 cup blanched carrot
1/2 cup zucchini cubes
1/2 cup bean sprouts
1/2 cup diagonally cut baby corn
1/2 cup shredded cabbage
1/2 cup thinly sliced spring onions whites
2 tbsp oil
1 tsp dry red chilli flakes (paprika)
salt to taste
2 tsp soy sauce
1 tsp sugar
1/4 cup finely chopped spring onion greens
Method
- Heat the oil in a broad non-stick pan, add the chilli flakes and sauté on a medium flame for a few seconds.
- Add the pineapple cubes, carrot, zucchini, bean sprouts, baby corn, cabbage, capsicum, spring onion whites and salt and sauté on a medium flame for 4 minutes.
- Add the pineapple juice, soy sauce and sugar, mix well and cook on a medium flame 1 to 2 minutes, while stirring occasionally.
- Add the spring onion greens and mix well.
- Serve immediately.

Add the 1/2 cup fresh pineapple juice, 2 tsp soy sauce and 1 tsp sugar, mix well and cook on a medium flame 1 to 2 minutes, while stirring occasionally.
